Ok, this is going to be a weird one.

I need a scratch pistachio cake recipe.
I've looked online, but almost all of them call for boxed mixes.
And I need to be able to veganize the recipe (I have vegan pistachio pudding mix but no vegan cake mixes available in my area)

The one scratch recipe I found called for quite a bit of other dairy like sour cream, and a ton of egg yolk, which would be a pain to work out substitutions for.

If nobody has a scratch recipe oh hand, do you think I could make a white cake, and substitute the pudding mix for some of the flour, add nuts and it would be ok? Or is there some other substitutions I should use?

What's up with the bumps here? Nothing personal, but I don't get it.

If vegan pudding mix is like non-vegan pudding mix, it consists of sugar, starch and flavoring. So it's not something you'd substitute for flour.

If it were me I'd either chop the pistachios and fold them into a non-flavored batter just before baking, or else make of paste of them and add it in with the wets.
