I saw a website awhile back that had a beautiful white wedding cake. It had white chocolate curls that looked like roses all over it. I think it was a cake decorator in Dallas. Does anyone know of this? They sold the device and instructions on how to make these roses.
Mac, I have a book called Spectacular cakes by Mich Turner that has lots of cakes similar style as the site ShelbysYummys suggested. The white chocolate roses are made from 'chocolate plastic". Give me a moment and I'll type in the recipe.
My book has like an 8 page explanation, and I have to go in a second. Try this recipe by Boonenati, it looks really similar:

Well, they are located in VA not TX--I was off by a mile or two.
Called to order the rose curler but they are on backorder--maybe one or two months. They took my name and number.
I was looking at it and I may try to make my own. Let you know how it turns out.
