I want to trace a logo onto either wafer paper or frosting sheets, place on my sugar cookies and trace and frost over the design with royal icing. Which paper would you reccommend or is there another way to do this?

Rice paper maybe?

I've worked with the frosting sheets and they are too thick to trace over. You would have to project the image you want to copy onto the frosting sheet to duplicate it. The wafer paper is thinner and easier to handle for tracing because it has no backing and is not so brittle.

I've heard the wafer paper is thick and hard to cut through? I'm worried that you'll be able to feel and taste the texture once it's on the cookie.

Wafer paper or potatoe paper or rice paper looks and feel a lot like regular rice paper, it's almost see though and if you go slow to cut it, you will be fine. Just practice ahead of time. The only problem you might have would be if you fill in the drawing with color the paper tends to curl making it a little harder to work with, but once you use a little corn syrup to affict it and you hold it a little bit you are good to go. good luck
