Hi,
I have a question. I have always use buttercream for my cakes. I want to add a chocolate flavor. How much I use cocoa or what is that you put in to taste chocolate. I need to have that info by tomorrow. Thanks I appreciate it.

I make a chocolate ganache using:
1 qt heavy cream
2 pounds semi-sweet chocolate (but never chips)
Boil the cream. Remove from heat and stir in the chocolate until melted. Chill in fridge until it is cool.

Then I mix about 50/50 ganache and buttercream. You can just mix by hand, you don't need to whip it.

I make a really nice darker chocolate bc by mixing Hershey's special dark and regular baker's cocoa. 3/4 cup total and I split that. You need to add 2-3 extra TBS beyond what you normally add though, so 4-5 TBS total. thumbs_up.gif

My favorite Chocolate buttercream is:

1/2 cup stick butter or margarine, softened and creamed together with about 2 tsp vanilla (use the real stuff) I usually like to mix the milk in here but I use a conservative 2 tbsp so it wont get too thin.

add 4 cups of powdered sugar and a bit more than 1/3 cup of cocoa.

once this is smooth if it is too thick I add a tiny bit more milk~ if too thin a bit more powdered sugar! :LOL:

I love this recipe because it tastes SOOO good and you can decorate with it if you don't get it to thin! My husband couldn't wait for me to get done with my classes so I would leave crisco in the dust!

Oh yeah my recipe makes a pretty light (in color) chocolate. but it is so good!!

My particular recipe uses both Crisco (plain flavor) and butter and 3/4 Cup unsweetened cocoa powder. There can be a radical difference between using 1/2 C and 3/4 Cup. Also the cocoa used makes a big difference. I used to use Nestles and Hersheys -- no more. It's Valrohna for my chocolate frosting now. Very expensive, but WELL worth it!! icon_lol.gif

You can also add some Hershey's chocolate syrup as part of your liquid. There's a recipe for this on the recipe link.

I made a cheats buttercream 2 weeks ago that I think worked well - made up my usual vanilla bc and coloured it brown with colour gel and then added finely grated chocolate to taste (dark chocolate works best as it is not so sweet). Tastes really good. I personally don't like adding cocoa as I find the taste quite bitter.

I just mix a bag of melted chocolate chips into my butter & shortening at the beginning of the BC Dream recipe... was very delicious!

I just make my regular buttercream recipe and add some cocoa power until I get the taste I want. The recipe I use makes about 12 cups so I put somewhere around 1 cup of cocoa powder in it. I have also added mini chocolate chips to it and used it as a cake filling.
