Can I Make Buttercream Frosting A Day Ahead?

I'm sure this post is somewhere but I did a search and I received too many hits to go through them all. I am decorating a cake on Friday, I usually make my frosting the day I decorate my cakes but I want to save some time so I was hoping I could make the frosting on Thursday. Can I store it in the fridge until Friday around noon time? And then just re-mix it to soften it? can I take it out of the fridge before using it to soften it up? Any tips would help, thanks.

I agree ... I do this all the time! Also, depending on how you make your buttercream, you may not need to refrigerate it at all.

I do this all the time...I just don't have time to bake, make BC and decorate all in one day. I believe BC can stay covered in the fridge for up to two weeks. I just take it out a few hours before I plan to use it so it softens up.

That is correct, I always make my icing the day before and it is just fine. thumbs_up.gif

Thanks!! I was pretty sure this was okay, but wanted to check. All the pieces of my cake are baked and in the fridge and 3 batches of icing are in the fridge as well. I assemble the crocodile tomorrow!! wish me luck!

Freezing doesn't effect buttercream at all? And for how long i can store it in the freezer?
