I think that a chocolate filling would go well, or even something cherry. Pistachio and cherry are a popular combination.

pistachio...i love it...i go to cold slab creamery...n order all the nuts...in a waffle cone...sprinkled w/nuts...haha...

Mmmmm.....my family makes a version of ambrosia that is whipped cream, crushed pineapple, coconut flakes, and a pistachio pudding mix. You could do it with or without the pudding mix, since you'll have the pudding mix in the cake, either way it would be YUMM-O! ![]()
