I want to use pastry pride & strawberries as a filling. But, don't know if I should use fresh strawberries, Jam or frozen/sugar. The cake is going to be a french vanilla cake covered in MMF.
Also, does anyone use pastry pride as a fillings? If so, what kind of fillings do you make with it?

Yes, I just had an online exchange with a wonderful woman who uses the frozen strawberries (the sliced kind in syrup) in her filling. She just whips it all up together right from the begining, not adding quite all of the liquid unless it gets overly stiff.

You can also use sliced fresh strawberries, just fold them in after whipping the pastry pride.

I'm sure you could use jam as well--I've only tried it once and didn't like the texture--the jam breaks up into these little jam clots that I just didn't like, but that's purely subjective and may not bother you at all!
