Recipe For Creme Centers For Homemade Chocolates?

Last year for Valentines I made the chocolate heart boxes and made my own chocolate candies. I used just a basic creme center recipe and added maple and amaretto flavoring.
I'm wondering if anyone has any other creme center recipes they'd share or just any other candy recipes that would be good.
Does anyone know how to make choc. covered cherries with the gooey stuff in them?

there's a recipe for the cherries in "Company's Coming... Chocolate"... I'll try to remember to look it up when I get home. It's basically marshmallow cream (it's called Fluff here...) margarine & icing sugar... it's a fondant that melts from the juice in the cherries after a couple of days inside the chocolate and gets all yummy and gooey.
