I have a client requesting an Italian Cream cake but I am not sure what type of icing I should use. Does anyone offer this flavor if so what type of icing would you suggest?

Most Italian cream cake recipes use cream cheese icing. Some add coconut and nuts in it as well, but that is pretty much personal preference. There is a great crusting cream cheese icing recipe on this site that you can decorate with. Good luck! icon_smile.gif

This happened to me about a year ago... I had never even heard of Italian Cream cake. Anyway, I used Emeril's recipe (from the Food Network site) and it's awesome!!! Then I just add cream cheese to my usual butter cream and ice it with that. That same customer orders it from me regularly so I must have done something right. icon_smile.gif Good luck!
