Help My Frozen Cake Is Sweating

I was told it helps to freeze my cakes then frost them but now there is beads of water all over my cake icon_eek.gif -- is this an issue --do i leave it alone or wipe off? Should i have frozen it frosted? HELP icon_cry.gif

I never freeze my cakes but I had thought when you do you keep it wrapped until it's thawed so that the sweat forms on the packaging, not the cake....

I know that doesn't help know....I hope it works out. Maybe someone else has some advice. : )

You can dab it off with papertowel.....Let it unthaw completely then and the sweat will evaporate once it is unthawed.

Thanks for the help I let it defrost and wiped a little water off right before people came over and no one said anything about it. I asked my mom if she noticed anything and she didn't. icon_smile.gif hopefully she wasn't lying.

what type of icing did you freeze?

I fill & crumbcoat all my cakes and freeze them for an hour before I apply the final smooth IMBC buttercream layer. That works really well! But I keep them in the fridge after that point.

I also freeze my filled & crumbcoated cakes for an hour or two before I cover them with fondant, which causes them to have a very tiny layer of "sweat" on them as they thaw back to room temp...but if you don't touch them, it evaporates perfectly. After that, they don't go back in the fridge or freezer.

I let my frozen cakes thaw completely in the wrapper before I decorate them.
