i had a wedding cake appointment this evening.
it went well, but i have a feeling they didnt like the price. thumbsdown.gif

i know everyone's region has different pricing for wedding cakes.
im just curious what would YOU charge???

295 servings.
147 are 'white chocolate raspberry'
147 are 'choc fudge truffle'.
the entire cake is buttercream in a 1/2 cornelli lace design
(cornelli lace around half of each tier, instead of covering the entire tier, with rose buds connecting the cornelli side to the smooth side.)
a pic of a cake i made in a similar design: http://www.cakecentral.com/modules.php?name=coppermine&file=displayimage&pos=-242683

(the cake im referring to would be much larger.)

thinking of your region, your prices,
how would you charge?

i guess im just doubting myself...

I looked at your site, and I don't think you are charging too much. If they can afford 295 people at their wedding they can afford your cake prices!! It is not worth the hassle to lose money. I have learned to let them go!!

$663.75 if it was all wedding cake, less if a part of the servings were from kitchen cakes. Oh yeah, plus extra for gumpaste flowers.

My price would be $1350, and my corneli lace isn't nearly as good as yours.

Your price is what you'd get here in San Diego for a very good price.

I came up with $737.50 $2.50pp

I'm in MI where cake prices are very low do to the bad economy. And, I think that is more than reasonable

'starting/base' price is 1.45 thats just plain cake, buttercream.

then you ADD (per serving):
fillings range from .40 - .60 cents
fondant is $1 per serving
basketweave, cornelli, intricate scrollwork etc .40 cents
gumpaste flowers (depends on type and how many)

PHEW! You had me worried. You're a very talented cake decorator and I couldn't imagine that you'd charge $1.45.

show 'em the rolls royce, quote prices for the civic.

at the show, as perky as possible (without sounding psycho)
i would say:

"our prices start at $1.45 per serving!"
"try a white choc raspberry sample!"
"other flavors and fillings are available!"
"look at these beautiful display cakes!"
"here's a book full of designs!"
"we can imitate any design you bring in!"

i never SAID that flavor or that design is available at the base price.

Your cakes are really nice.
Did you use sugar veil on the 2 tiered sage green wedding cake with purple flowers? It looks like netting
Great work and time consuming cakes!

I like the logo you used on your website

mypastrychef,
no sugar veil. icon_smile.gif

the green cake is a dummy, so its covered in fondant, royal icing for the lacework 'netting'.

also, its a 6" & 8" so it didnt take long at all. ive done the design for larger cakes in buttercream, the only thing that makes it take longer is that you cant wipe off mistakes like you can with fondant.

about sugar veil, i knew someone that bought the whole set but i never got to see her use it. is it useful at all?

MPC, I see you've moved up on Google.

You are the first hit after: "Louisiana Pastry Chef"

I bought the sugar veil mix and tried it out. It didn't last long because it is quite humid here.

I notice I average about 200 hits a day, that must be moving me up the ladder. WOW! I'm impressed.

your prices sound very reasonable. im even less here in south dakota. im finding as time goes on with this business, they always find the money for other stuff, favors, expensive cake cutters, expensive toppers. they can find the money for a quality cake. im only now starting to view it this way. after giving great prices then seeing extras they spend on that werent always necessary. maybe they are checking out other decorators, you could still hear from them. your work is beautiful by the way. i always wonder ''why'' too if they dont choose my services, sometimes ive even asked to better improve my business, if i see or hear from them in the future. you win some and you lose some......

I would charge $2.50 per serving which comes to $737.50 for that cake. I include different fillings and cake flavors in that price, but buttercream, not fondant.
I would love to get that price! Weddings around here averarge about 150 servings icon_sad.gif

Mine would be $3.75/serving for that cake, because both cakes have a "gourmet" filling (not flavoured BC)

So my total would be $3.75 x 295 = $1106.25

If this was me, it would be priced as follows:

2.50 pp for the White Chocolate @ 147 servings = $367.50
2.75 pp for the Triple Fudge @ 147 servings = $404.25
And an additional 5.00 per tier for the cornelli

Total = $786.75
