Need Help On Making Nfsc With Rbi

I am making NFSC with RBI and I have a few questions?
1. How long can you freeze these cookies with RBI and will they still taste good after being frozen?
2. Does the RBI crust well enough to where you can use writerable markers on them?
I was going to make the cookies for a craft booth at my grand daughters birthday party, and let the children color or write on them with the markers.
Her party will be in My Little Pony Ponyville Fair theme, I will be doing her cake, all decorations, invites, games for game booths, treats for a sweet booth and much more, so what ever I can get done a head of time, I would like to do ( like the cookies). If anyone could help me I would appreciate it.

the cookies, if well wrapped, will be fine frozen for a few weeks. I don't think rolled buttercream will be hard enough to write on. It would take a gentle hand, and kids don't have that.
Royal icing would be a better choice for decorating with color pens.
I tried using the markers on the rolled buttercream and it did not work well at all.
I've never frozen decorated cookies. I have frozen the cookie dough, non-decorated cookies, and the rolled buttercream separately and have not had a problem. I wrap them up good and I also put them in a freezer bag. I'm just guessing but am thinking you probably wouldn't have a problem freezing a decorated cookie.
Thank You All, for replying to my questions. This helps me in making a choice of which icing will be better to use for the children to write on.
This will also help my work load for my grand daughters party, which I am having a blast!! doing it for her, leave it to the love of a child to make you do something (decorate a birthday cake) you having done in 20 years.
