does anyone know any yummy fillings that one could fill cupcakes with(for children) also im making a choc. cake for someone and they want a strawberry mouse type of filling any ideas on how to accomplish that.

Check on Recipegoldmine.com, they have all kinds of frostings and fillings on that website. I've never done a strawberry mousse before, but it sounds really good...

For the cupcakes...I do not think you could go wrong with a simple icing filling or maybe a chocolate icing filling. I think I would stay away from something fruity just in case of allergies. I am sure the kids will love whatever you do as long as it has icing on it.
