HI. I usually make rolled buttercream, but I have been thinking about trying MMF. I keep reading about it hardening...so my question is, does it get hard once you cover the cake? The rolled buttercream stays very soft. I wouldn't want to use it if it hardens. Any help would be appreciated.

It will set up on the outside, but the buttercream between the cake and the mmf will keep it soft enough to taste good and not get stale or crunchy.

It does harden a bit but it is still edible and able to cut. Its not going to stay soft like rolled bc though. It does keep the cake and icing inside nice and fresh tasting.
