What To Do With Leftover Egg Yolks?

I am finally going to attempt SMBC, but I'm wondering what to do with all the leftover egg yolks. I hate to throw them away. And it sounds like using the carton egg whites don't work so well with SMBC from previous posts.

There are many things you can make with them.. pastry cream has to be one of my favs. Make cabonara pasta.. lemon curd.. you can freeze them too if you mix in some sugar or salt. icon_smile.gif

OMG! I just made SMBC yesterday, and I've just sat down from using my yolks to make vanilla pudding. Creme brulee is also a great way to use up some of those yolks.

In one of my cookbooks, right beside the recipe for Angel Food Cake, there's one for Giant Egg-Yolk Spongecake. They're together so that you can use the whites in one and the leftover yolks in the other. If you want the recipe, just say the word.

you can add food colouring, and paint it onto cookies before you cook them.

I actually give them to my dogs. Egg yolk is very good for a dog's coat, makes it shiny and healthy. I try to keep sweets out of our house for the most part so that the family doesn't think that they deserve sweet treats with every cake I make so I save my ingredients and money and cook up the yolks and feed it to the dogs (saves money on dog treats too lol)

You can make curd. I have done it so many times. Lemon, raspberry, mango, pineapple or anything you like. icon_smile.gif

I use mine for cake or cupcake filling. If you google the type of curd that you want to make you'll find lots of recipes.

I have used lemon curd over a slice of pound cake for a super easy dessert. Frozen Sara Lee pound cake works great.

Simple Simon Pie
6 egg yolks
1/2 cup butter
1/2 cup flour
3/4 cup sugar
1 cup coconut
2 cups milk
2 tsp vanilla

Blend in the blender. Pour into a 10" greased pie plate. Bake at 350 for 1 hr

nutritious and delicious, and a nice dessert for the family. sturdy enough to send to school in a lunch, too.

You can use them for baking but another great way for egg yolks to be used.....SERIOUSLY......the DR prescribed this for my son with his acne, because Nothing was working, not pro active, not $200 tube from the dermotologist.....not store brand stuff..... DR said wash your face in egg yolks.....what !!??? let it sit on your face for 10 minutes, then wash off.....it worked , in just the first use, the redness had disappeared from my sons face and now after washing daily with the yolks for 2 months, his face has cleared up. but you must continue the use, because if he skips a day or two, the acne reappears..... try it... i even use it for daily cleansing, beats paying the high dollar treatments.....

Oh my.
There's enough cholesterol in that recipe to clog up the remainder of my arteries. But it does sound good!

Frankly, I throw away my egg yolks.

You can use it as a filling for a white cake. Taste so yummy. Here is the recipe I use. Instead of the nectarine, you can use any fruit you like,
