Letterhead Cake With Gumpaste Dogwood Blossoms
This is an office cake for our former dean, who retired this summer. The cake is made to look like a stack of our letterhead, with a memo in honor of his retirement. He is from Ireland, so I chose an Irish blessing for the "memo lines." The flowers are dogwood blossoms made from gumpaste, in honor of his second home here in Southern Illinois, which is covered in Dogwood blossoms in early summer each year.

Oval Wedding Cake With Ivory Roses
Ivory buttercream over red velvet cake. I used a 2D tip instead of 1M tip on the roses so the petals would be a bit more defined, since I was using Antique Silk sparkle petal dust in spots all over the cake to add dimension. I'm now a huge fan of using the 2D tip on these roses instead of the 1M! The roses just seem crisper, and you have less "duds" that you have to scrape off and do over to keep from just looking like a spiral.

Time And Relative Dimension In Cake (Tardis From Doctor Who)
I've been dying to make a Doctor Who cake and couldn't have been happier when a regular customer ordered this TARDIS for her boyfriend's birthday. I had to tell her "It's bigger on the inside" when I gave it to her -- sadly she never watches Doctor Who with her b/f so the joke was lost on her. :( Red Velvet cake with vanilla almond buttercream and MMF.

Cabbage Rose Round Cake
I made this copycat version of Manda's 1M-Tip Rose Cake from the i am baker blog. Posted it on my facebook, and almost immediately had an order for a three-tier oval wedding cake just like it (except ivory)! I can't wait to do this as a wedding cake over Memorial Day weekend!

Vine Cake (Hummingbird Cake With Cream Cheese)
This is a 6-inch cake I did last weekend (May 2011) on a moment's notice for a client planning a last-minute surprise for her son and daughter-in-law. The cake is hummingbird cake (banana/pineapple/pecan) with cream cheese frosting and a center pineapple-ring filling. Basketweave sides underneath the vines and some royal icing leaves here and there.

Baby Oliver's Fondant Star Cake
This was for my youngest son's 1st birthday. He and his brother have birthdays only six days apart, so naturally I try to theme their cakes similarly but they each get their own cake for the party. Since his older brother chose a Star Trek theme for their party in December 2010, I made Ollie's cake a shimmery star to complement the table. I used an old copper Jello mold to create the small star, which took about 2/3 of a batch of cake batter.

Star Trek Emblem Cupcakes
I made these cupcakes in December 2010 for my 4-year-old Trekkie son's school birthday party (complementing the Enterprise cake in my photo section). Covered in buttercream topped with fondant, resplendent in Science Blue, Command Gold, and Engineering Red. Jamie loved getting to eat a "red shirt guy." Haha!

U.s.s. Enterprise (Star Trek) Birthday Cake
My son is a diehard Trekkie, and begged me to make him a Starship Enterprise cake for his 4th birthday. The bottom is a one-layer 9x13 covered in MM fondant and swirled petal dust to look like outer space; the upper layer is an 8" round that I baked in a pie pan instead of a cake pan for a more angled dimension on the outer walls. All decoration is fondant and petal dust, with food coloring marker used for the lettering.

Rubber Duckie, You're The One
I was commissioned to create this in April 2011 for a client who'd seen a similar photo of a smaller cake and needed a full-sized cake version. Took a few liberties, myself, as I went and was mostly pleased with the finished result. All materials either buttercream or marshmallow fondant; the only non-edible support in the entire project was one single toothpick used to help hold up the fondant sailboat, and probably was expendable in the end. Faucet made of dark gray fondant painted with light silver petal dust.
