Croquembouche Trio
I tend to break the rules a bit when it comes to tradition and baking, so instead of making a croquembouche the traditional way, with hot sugar, I used chocolate. Who really wants to burn their fingertips with hot sugar anyways? Not this girl. I did, however, have to assemble all three of these in the walk-in fridge so the chocolate will chill quickly enough to hold the choux to the cone. I also added some gourmet chocolate covered strawberries into the mix, held on by toothpicks.

Croquembouche
A modern version of the croquembouche. Individual cream puffs are stuffed with diplomat cream or strawberry white chocolate mousse then glazed or dipped in dark chocolate and toasted almonds. French macarons are added for variety and pizazz. Individual components are attached using chocolate instead of the traditional hot sugar.

Minnie Mouse Birthday Cake
I was inspired by a red/black Minnie Mouse cake I saw on this site and I automatically knew it would be perfect for this little girl's 2nd birthday. Her parents had originally wanted to order cupcakes, but when I showed them this cake, they changed their minds. Cake is chocolate with strawberry mousse filling and strawberry simple syrup. No artificial flavors harmed in the making of this cake.

Hollywood Theme Sweet 16
This cake consisted of 4 different flavored tiers: strawberry cake with strawberry mousse and whipped icing, red velvet cake with cream cheese icing, banana cake with cream cheese frosting and chocolate cake with strawberry mousse and whipped icing. Most all decorations are fondant. Cake is covered in Elite by Fondx fondant which is super easy to work with if, especially if you have their mat. Spotlights on bottom are electronic tealights covered in fondant.

Fall Wedding Cake
4-tier wedding cake with antique white fondant and real orange roses. The gold accents are gold colored fondant, then sprayed gold with edible gold spray. The flavor of the cake is actually the sample cake I made for the tasting. The bride liked it so much, she couldn't decide on just one flavor. The cake is banana, chocolate and vanilla alternating layers with berry mousse, lemon curd and whipped icing.

Square Purple And Silver Wedding Cake
Bottom two tiers are chocolate with raspberry mousse. Top tier is German Chocolate. This is my first attempt at making gumpaste flowers, as I couldn't find anything that would work with the design I had in mind. Ribbon looks black, but is actually deep purple. Thanks for looking!

Phantom Of The Opera Quinceanera Cake
Banana and chocolate layer cake with cream cheese icing and MMF. This was my first attempt at making MMF from scratch. The taste is 100 times better, but I find that it dries, cracks easier. Candles are electronic tea lights covered in white chocolate. Roses are gumpaste and painted with black gel color to look like black roses. Fondant was tinted a gold color then covered with edible gold spray by chefmaster.

Sample Strawberry Cake
I made this "rush" cake for a wedding cake tasting. The bride wanted white cake with fresh strawberries in the cake and cream cheese icing. I ended up with a strawberry champagne cake with strawberry simple syrup, white chocolate mousse, fresh strawberries in the layers and cream cheese icing. The bride loved the cream cheese icing so much she nixed the mousse and wanted it in all the layers. I had to include that strawberry on steroids on the top!

Jungle Theme Baby Shower
The grandma to be wanted a jungle theme cake in the colors the parents to be decorated their nursery: sage, rust, brown and yellow, and this is what I came up with. The entire cake is carrot cake with cream cheese icing. The adorable figurines on the top are fondant and were ordered from etsy.com.

Garden Cake
This cake was done for Homeland Florist's 85th anniversary. Each layer had a different flavor. Bottom: almond champagne cake with lemon buttercream Middle: chocolate with nutella buttercream Top: carrot cake with cream cheese buttercream. The top layer required some last minute changes, since it would not hold it's shape because it was so heavy. This cake took a total of 10 hours to make.
