I was completely honored to be asked to make a cake to be considered for CC Magazine. I can still hardly believe it! It was such a fun experience. The them for this cake was Secret Garden Wedding and requirements were that all tiers have a buttercream covering and at least one icing technique. I wanted to show more than that, so I did one per tier. On the bottom tier I used a leaf tip and very fluffy whipped buttercream icing. I added on some fondant clovers and grass shards. The second tier up I wanted to mimic the textures on the statue in the inspiration photos. I used bunched up damp paper towel and plastic wrap to achieve that effect then added on some pink petals to bring in the tones from the turnip. The third tier up I decided to do brushed embroidery with buttercream icing. I added in some pink, pearls and a few fondant flowers. The top tier I did rosettes and added a pearl in the center of each. I completed the cake with a fondant bow/brooch. I used real cake for this instead of cake dummies. I kept it on my counter for a day after the photos were taken before I donated it to my Grams nursing home lol. I wanted to be able to stare at it longer, but it is cake and I wanted it to be enjoyed. I hope you all enjoy the cake as much as I did making it. <3 (I saw a tutorial on pinterest awhile back on how to make clover earrings out of clay, so I tried it out with fondant instead. For brushed embroidery, I watched an amazing video by SweetAmbs. She uses royal icing but I used buttercream and a wet paintbrush. For the bow I used the bow tutorial from Royal Bakery and the brooch mold I purchased from Way Beyond Cakes by Mayen.)

Ai, yi, yi. This cake...has quite the story of how it came to be and if you read along, you'll see why there are two very different looking cakes before you. But I assure you, they are one in the same. I should start by saying it has been an incredibly rough week...so much going on and to top it off I was sick, sick, sick. Didn't even get to start decorating until 11PM that night. Any way, I was so excited because this cake was made for a really good friends Mom's surprise 50th birthday party. Oh and she gave me TOTAL creative freedom on every aspect. She said she loved my petal cakes and if I wanted to try out a new technique or anything to go for it, no specific colors...surprise her. I love this girl! So I wanted to try out a 'rustic' icing, which I think I need some practice lol. I also have been seeing a lot of these cascading fantasy flowers for wedding cakes, so thought I can do that for a 50th cake. So here's the story: The one you see on the left was the original cake, before we left to deliver it. On the way to deliver my guy hit the breaks a little too fast because another car was coming way too fast. Needless to say, the bottom tier started to buckle. I had the cake covered with saran wrap thankfully and I held on to it for dear life. We made it to my brothers house which was a few streets down from where it needed to be delivered. Took off the top two tiers to be able to salvage them since they were still in tact and took off the petals that were on the bottom tier so I could still use them. Bottom tier however, well while I was able to wrap in saran wrap to save it for cutting I could not use it in the overall design. But it was way too yummy to throw away, that tier had the raspberry filling that went so well with the chocolate cake. *sigh Any way, there was no time to rebake but I really wanted to make sure it stayed a 3 tier. So, I went to the store and bought...gulp...frozen pepperidge farm cake. I cut those bad boys in to two 4" circles and made myself a top tier! In the end, I'm happier with the outcome of the second cake. I kept saying I wished I had made the original 4 tiers because I felt like it needed more height. Caking divine intervention at it's best? I think so lol. ♥ Cake is a moist chocolate cake filled and iced in vanilla buttercream. Bottom tier filled with raspberry buttercream and raspberries. Center flower made from a 50/50 gumpaste/fondant mixture. Rest of petals are fondant.

My First Icing Smiles Cake! Dream Cake For Torey...

Here?s the story on how this cake came to be? This past Monday I received a phone call for my first call to action! I was told that a dream cake was in need and asked if I was able to take this cake on for Torey who was turning 18. I had NO orders this weekend so I said absolutely, yes! On Tuesday I was able to speak with the birthday girl, Torey. She told me that she really wanted a cake that had something to do with an appaloosa horse, which she just happens to own one of her very own named Victoria?s Secret (Secret is her barn name). Her parents bought Secret for her last year, but they have no idea when her birth date was so she wanted to celebrate her birthday along with her horses.She wanted chocolate cake with peanut butter filling and icing. Because it is a dream cake it needed to be a sculpted cake or a tiered cake. I don?t know what I was thinking when I decided to go for doing a carved cake with not much notice to plan, but I went for it lol. This was by far the most challenging cake I have ever taken on. Things were going well and then the nose started to tear a bit. I saran wrapped it and thought in the morning it may be okay?when I woke up it seemed good so I took off the saran wrap. While making more icing and doing other small things, the entire nose started to fall off. I tried everything to save it but after about an hour of trying I just ripped the whole darn head off?.at about 10:30AM, the cake was due for 4:00PM and I was delivering. Luckily that morning I had thought to bake extra 6? cakes just in case something happened I would have a backup plan. So I stacked and carved 3 cakes for the neck/head. I used a cake ball/RKT mixture for the nose. I doweled and stacked the cake as secure as I have ever done before and it didn?t move at all during the hour long delivery ride. This cake was HEAVY. I realized it wasn?t going to fit in my car with my daughter in tow, so thankfully my cousin watched her so we could take out the car seat and use the whole back seat. We got it in the car, but I had no idea how we were going to get it out lol. Luckily her Dad was able to lift it right out with no problem then we carried it in together. Torey, her parents and her brother loved the cake and were so incredibly gracious. It was by far the most rewarding thing I could have ever done to make this cake for Torey through Icing Smiles. I can?t say thank you enough to Kristen from Bliss Pastry! She had her own beautiful dream cake to do even though she was not feeling well all week, and yet she still did so much to cheer me on and help me get through the head falling off drama lol. She is one amazing lady! <3><3
