Catalina Tile Cake
Three tier cake covered with Catalina tiles (circa 1920's). These tile replicas were crafted from fondant and piped and filled with royal icing. Each square tile was cut and colored to cover the entire surface of the cake. Three sugar paste succulents sit on top to finish out the Spanish inspired designed.

Fender Stratocaster Guitar Cake
This cake is a replica of a classic Fender Stratocaster. The guitar strings are real because there is nothing in the sugar world that looks like that and can with stand temperature change and moving the cake around. The Bridge is made of sugarpaste which is dried to very hard so that the strings can be threaded through, just like a real guitar. I was excited to use my airbrush to paint the classic 3 color sunburst that you see on Fender guitars. If you haven't seen it, check out my other guitar cake which was a Gibson Les Paul, pics are posted here too. My friend who owns the guitar collection told me I should recreate a Paul Reed Smith next ;) I gotta find the $target market$ that is interested in this kind of cake art so I can add to my collection.

Gibson Les Paul Guitar
Recreation of a Gibson Les Paul Custom guitar. Everything is edible except for the strings. The guitar is complete with tuning keys, treble switch, inlaid pearl frets, and a cherry burst paint job. The bridge is made of gumpaste and crafted to thread the strings through. The paint job was done with an airbrush to recreate the "cherry burst" paint job on the original. Oh, and the cake inside is classic white with a lemon curd and lemon buttercream filling;)

Dorado Fish, Or Mahi Mahi
This three foot long Dorado fish was carved and covered in fondant and hand painted to create this realistic representation. No fish guts here:-), only lemon cake and yummy vanilla bean buttercream filling. The fins were made of gumpaste and the eye was made of poured sugar. I presented the cake on an Igloo cooler top, just like the coolers they use on charter finishing boats.

Datron World Communications Field Radio
This cake is a replica of a field radio manufactured by a local company here in San Diego. Five layers of white cake filled with lemon buttercream covered in colored fondant . All of the knobs, handles and dials are gumpaste and fondant. The logo was painted on with food coloring and all of the white letters were piped on with royal icing. The aged appearance is created by using a sponge brush and powdered coloring.
