Similar Design In 5 Tiers
This will be featured in Town and Country Magazine of which I was specifically asked to incorporate design elements from my twig-dove cakes. The flavor was styrofoam, no filling, covered in white chocolate fondant. Buds, birds and eggs are made of gumpaste. Branches and nests are floral wires. The sizes are 12", 10", "8, 6" and 4" rounds--first time using a 4" dummy. I'm happy with the outcome although I wish I had arranged the appliques differently and repositioned the stem of buds on the third tier. Surely, my next cakes will no longer have twigs, birds or buds.

Dark Chocolate Stripes
Anyways, this cake was done back in January for the March issue of Cake Central Magazine. Jackie wanted something dark with a splash of color. I would have used bright flowers but at that time, I didn't have the supplies. I promised myself I won't be using the buds and birds anymore because it's been overused--but then again, this was done before my competition and my blue cake (so it has already ended). I'm satisfied with this cake although I wish I had made a much grander cake. Thanks Cake Central Magazine!

Country Birthday Cake
As usual, I made a birthday cake look like a wedding cake (birthday cakes are my weakness). This is inspired by my other competition cake that didn't make it back home since it broke into pieces. I recreated it in 4 tiers and I'm pretty much satisfied with it. The blue is a tiny bit tealish in person (although I was really trying to achieve this blue). The egg is supposed to have a stand but it broke (as well as the egg so I had to re-do it).

San Diego Show Entry
Surprisingly, I won best of show! I cannot believe it. I was in shock! This was my first competition and didn't expect to win at all. I also made 2 other cakes, one didn't make it to the trip and the other one won 3rd place (didn't make it back home). Anyways, I had to travel this cake for 5 hours in a small car. I was so nervous.

My Country Modern Thanksgiving Cake
My Thanksgiving cake but the design is actually for my Christmas cake (decided to make a gingerbread house instead of a cake). Either way, it still reflects both holidays. Everything is edible (except for the wires), the birds and buds are all gumpaste. The cake itself is fondant. Since this will be sitting in the middle of the table, I had to make a very clean and seamless 360 degree view. Overall, this is the cleanest cake I've ever done.

Black And White
My birthday present for my best friend. I used Jennifer Dontz's semi homemade fondant and atleast 100 flowers from Cal Java. Bottom tier is a dummy and the rest is chocolate cake with alternate filling of chocolate fudge and cappuccino filling. I used ganache under fondant. I changed the design plenty of times but I am happy with how it turned out.

8Th Fondant Cake
I only had less than 24 hours to plan and start this from scratch. Everything is edible. I wish the tree could have been better (didn't have the ingredients to make the one I prefer). The bottom tier is 8-9 inches tall and so I used the wrap method. Overall, I am okay with the results

Candy Cake With A Little Twist
This is my 7th fondant cake. It is a for an online contest. The theme is "candies" so I had to incorporate the candies into the cake. I wanted to do something unexpected and use the candies creatively. The red parts are actualy wrapped licorice (Twizzlers pull and peel). I added streaks of silver to give it that vintage feel. The black border the top edges are Red Vines Black licorice. The centers for the flowers are Haribo Rapsberry Gummi candies cut in half and painted silver. The streaks on the bows are there for a purpose to give it that different look.

6Th Fondant Cake
Needs a lot of improvement but satisfied. Nest is made of chocolate, bird is made of gumpaste, there are also realistic looking eggs that are made of gumpaste as well. This is a very woodsy cake, hand painted trees. The other side of the trees is much better. I used chocolate cake with chocolate filling so it seems like you are eating dirt in the forest.

Fifth Fondant Cake
B-day gift for a 12 year old. I wanted to make it black and white but she loves purple so I was forced to use it. Not very happy with the results. I think it looks a messy. The decorations were a last minute thing, the round tier isn't smooth enough, again--last minute thing. The brush embroidery took 6 hours, the purple looks darker in person, I flicked dust on the purple, to give it a distressed/dusty/wintery effect (NO it is not cornstarch, it looked shimmery in person). Overall, I am not that satisfied

4Th Fondant Cake
My 4th fondant cake. Carrot cake with cream cheese filling, vanilla cake with caramel filling and red velvet with cream cheese filling. First time doing brush embroidery. I hated borders in the middle tier -- so uneven. Top tier isn't smooth. I turned white fondant into black and the consistency turned super soft. I realized that the tails for the ribbon should be a lot wider. I would have to say that I am not that happy with the results but this does look a lot better in person. Ugh I'll try next time.

3Rd Fondant Cake
My 3rd fondant cake. This is not the life sized dress cake I've planning for since that would be a big cake. For the meantime, I made this one instead. It's not life sized nor life like-- I made it that way. It's 3 tiers plus the topper, the cake is about 3 feet tall. The wood is made of fondant/gumpaste as well as the molding around the pole. Not too happy about the colors. The body is all RKT covered in fondant/gumpaste. I used carrot cake and red velvet with cream chesse filling.

First Fondant Cake
MY first fondant cake. 12, 10, 9 and 6. Poundcake with raspberry filling and buttercream. I was going for an embroidery finish but unfortunately I couldn't lay my fondant without tearing so I just had to put pieces of fondant together (the only "whole piece" fondant covered cake is the 3rd tier which was my first try and it didn't turn out well so I had to cover it with petals). SO I guess I just had to go with the drapery-like finish. The flowers are made of gumpaste. Thanks for looking!
