Mad Hatter, Grade 8 Graduation

This is the cake I made for my daughter's Grade 8 graduation dinner. It is chocolate cake, with chocolate IMBC. Covered in fondant. This cake gave me so much trouble! So gald to see it finished and I was really proud at the way it turned out, all things considered.

Royal icing corals on top tier with hand made white and milk chocolate marbled seashell chocolates on top tier and cupcakes.

Castle Cake

8" round white cake with vanilla buttercream. The turrets are from Wilton's Romantic Castle Cake set, peaks are covered with buttercream and then rolled in purple cake sparkles. Door and main roof peak are also covered in buttercream and cake sparkles. Flowers are fondant, leaves are buttercream. I had some trouble with the front turret just before I took this pic, but I had fun with this cake nevertheless. I made this cake for my daughter's 8th birthday. She loves it. She said to me "Mommy, I don't want to eat it...it's too pretty.``

My First Ever Wedding Cake

Bottom layer - carrot cake with cream cheese frosting; 2nd & 3rd layers - lemon cake with lemon buttercream; top layer - fruit cake with rum buttercream. All covered with marshmallow fondant and royal icing apple blossoms in 3 varying sizes.
