Elsa's Frozen Ice Castle Cake
This is a 3-tiered cake for my grand-daughter's 7th birthday. Most of the decorations are between the layers in the separator plate areas. I used flexible Plexiglas painted with shimmering acrylic paints in shades of blue. Then I scored and cut the Plexiglas into jagged pieces. I attached them to the lower separator plates with Royal Icing. I put blue flickering tea candles (battery operated) inside the ice castle so the blue looked even more like shimmering ice. I added Frozen figurines, a pond, a clear wedding staircase and some snow covered trees to decorate the presentation board. It was a big hit at the party.

Baby Castle
This is a Castle Cake I made for my daughter-in-law's baby shower. This was taken at the restaurant. I posted another shot of this cake in my kitchen. The baby is made of fondant and the shell cradle she is sleeping in is made of gum paste. The waterfall is made from fruit rollup strands.

Poinsettia Cake
Chocolate Fudge cake split into 4 layers. Filling is made from 1/4 inch raspberry jello discs topped with rich chocolate mousse layered between the cake. Frosting is white chocolate buttercream then covered in MM fondant. Poinsettia is made from gum paste. Holly is made of MM fondant. Berries are Wilton Sour Cherry drops. The holly and green leaves got their shine from being dusted with green luster dust then steamed for a few seconds. Gives them a waxy look. This was made for my husband's birthday.

Wilton Instructor's Meeting July 2006 - First Place
This is a cake display I made for the contest held at the Raleigh NC Wilton Method Instructors Annual Meeting. The contest rules said to make a display that will fit in a one square foot area that advertises Course 1, 2 and 3. I did mini cakes that are only about 4 inches in diameter, ... the basket weave cake is narrower but longer than that. This display won first place. The best thing about that is that the judges are the other WMI's at the meeting.

Wilton Course 2 Basket Weave Display Cake
This was a display cake I brought to a Wilton Instructor's Annual Meeting for one of their instructor contests. It won first place. I used teal for the basket weave and a sampling of Course 2 royal icing flowers as well as a color flow picket fence and bird and butterfly.

Tuxedo Groom's Cake
This was the groom's cake I made for my step-son's wedding. It was made from 2 heart shaped layers (10"x2") split into 4 layers then filled with European raspberry filling and chocolate mousse (with some Godiva liqueur added), then frosted with chocolate buttercream, then covered in homemade chocolate fondant. The boutonnière is a lavender rose with white baby's breath and green leaves all made from fondant. The tie is painted with edible silver luster dust and the vest is lightly dusted with the same.

Just When You Thought It Was Safe To Go Back In The Water.....shark!
I made this for my dad's 76th birthday. When we were growing up, we lived in Bayville NY by Oyster Bay. Mom & Dad would sometimes take the boat out in the bay and go around to the other side of Center Island for an afternoon. Mom would collect rocks that had little chips of mica in them for her rock garden and dad would fish or tinker with the motor on the boat. One time they saw a really BIG shark come up behind the boat. This cake represents that event!

75Th Birthday
I made this for my Mom's 75th birthday. The cake is orange with a vanilla mousse & mandarin orange filling. Homemade fondant covers each tier. The roses are also fondant except at the very top; those are bc. The heart is made of light and dark pink inlaid fondant. PS: The celebration was fantastic and the cake was a success!

Dad's Radio Control Airplane
I made this cake for my Dad because his favorite hobby is building and flying radio controlled airplanes. He made his masterpiece from scratch and has flown it flawlessly (if you make just one mistake, it's bye-bye plane!) so I thought this would be a suitable tribute to his accomplishment. Those are his colors and id letters just like the real thing! The motor at the nose of the plane is made from royal icing. The rest is decorated in bc.

Small Wedding 2-Tier
This was made for a friend of mine whose father was re-marrying. It was a small wedding (the couple was in their 70's I believe). I asked for a photo of the couple to make a personalized cake topper of them standing together. Sorry the photo is so dark. This was taken by the groom's daughter for whom I made the cake. There are pearls pressed into the pale blue garland to add a little sparkle to the cake.

Black Forest - My Mom's Recipe
This is just one of those yummy cakes you make to treat yourself when you are having chocolate withdrawal symptoms. This is a rich dark fudge cake torted into 4 layers. Each layer has Cherry Kirsch drizzled on it, then frosted with fresh whipped cream then topped with a layer of cherry pie filling. Repeat for the next two layers. Before putting on the top layer, turn it over and drizzle, then frost the top with cream and add marichino cherries and chocolate sprinkles. Make a pot of coffee and indulge!

3D Fire Truck Cake Riding On Donut Wheels
This is the same cake I also uploaded to the "Truck" category, but this is a different view (other side). I made a kit of this cake to give to my Course 2 students (I teach the Wilton Method of cake decorating). The store I teach in sells my kits too. This takes a bit of effort with all the royal icing parts and color flow parts and to build the special raised base, but the results are worth the effort!

Construction Cake Birthday Cake
This construction site birthday cake is made on a full sheet cake. The "dirt piles" are mini wonder mold cake mounds iced in bc and covered with vanilla wafer crumbs for sand and oreo cookie crumbs for top soil. Toy trucks carry pirouette cookie "logs", dump trucks and front loaders dig up top soil. Miniature plastic pine trees and jelly bean rocks add to the decorations. Small construction signs decorate the border of the board. Airbrush was used to apply a subtle green base to the ground.

Super Chocolate And Chocolate Mouse (Not Mousse) Cake
A young man wanted a race car cake, then browsed my web site and found a tiered chocolate cake he wanted instead, so he got this two tiered Super Chocolate cake with chocolate mice on it. (Mice are Hershey kisses turned sidesways with sliced almond ears, attached to a chocolate covered cherry with stem. Eyes and noses piped with bc dots)
