This was my cake for Course 3, Lesson 1.  I just wanted to have a little fun and exaggerate some of the techniques that we learned.  For instance, I piped the "delicate" cornelli lace with a 5 tip.  This cake is 3 six inch layers.  I used the canned Wilton chocolate icing and homemade buttercream for the piping.  I really enjoyed this cake.  I wish I could perfect bow making.  It was much easier to make them on a flat table top in class instead of on the side of a cake.  I will be working on that.  Thanks!

7 tier (bottom 2 dummies).  Fondant covered with all royal icing decorations.  First attempt at royal icing string work.

The bottom two layers are dummies and the top layer is real cake.  The bride then served sheet cakes for the guests.  Even without the baking, this cake took a lot of time to decorate.

Strawberry cake with champagne icing.  Apparently I need to learn how to use that drop string marker.  It made a mess of my sides and I had to put that silly star border to hide the imperfections.  I like the way the rope came out and the writing too.  At least it tastes good (from the 6" sample cake I made with it).

I wasn't crazy about this design.  I found it difficult to keep the lines straight!  This is before the customer added their own flowers.  I'll repost when they send me the finished product.This is an update ..  They sent me a picture after they added the flowers.  It really helped this cake's appearance in my opinion; as it wasn't one of my favorites!

I made this for a welcome home cake for my sunday school teacher. Who just got back from holland. It is all BC. It was my first attempt at ferns and either the first or second attempt ( I forget which) at floral arranging (sp)

We used to do this one all the time at Publix bakery.  Airbrushed effects with "silly string" sides as confetti.  A simple easy birthday cake for anybody! (butter cream icing)

This is my first stacked/anniversary cake andI made it for my own wedding anniversary.  It is all buttercream.  The top layer is banana cake and the bottom layer is cinnamon swirl.  Inspired by the Wilton Yearbooks.

Chocolate cake and buttercream with a few fondant accents for string connections. Airbrushed  with foodcolor and silver dust. Strings are fishing line.

This is a practise cake that I made. The top is not included in the picture because I don't like the way it turned out. The roses were supposed to go in every other scallop but I ran out of time. I got the idea from a magazine. It was a two tiered cake but I just did the bottom tier.

This is another masterpiece by my mother. A three tiered butter-cream beauty with hundreds of handmade pale peach stephanotis flowers. Then finished off with the light sage green drop strings, fountain, and fresh florals underneath.

This wedding cake is one I just did for a wedding tonight, one of our good friends.  I love doing wedding cakes for friends!!  They are always so appreciative.  It's all buttercream with fresh roses.

I took a class in Toronto over the last few weeks and this was our final project.  The dummy cake is covered in fondant and then all the detail is done with royal icing.  I am not happy with the topper but that was part of the class.

Three tier floating french vanilla bean wedding  cake, filled with raspberry preserved and icing in buttercream.  String work, scrolls, and rose buds are royal icing.

Just practiced string work on the practice board and had to come home and try it on a cake.  The colors are not what I would normally choose,.. just trying to use up some icing leftover from other cakes, and it's just for practice.  I was quite pleased with how even everything came out and the ruffles look pretty good too if I do say so myself!  :)  Thanks to everyone here for all the great inspiration and ideas, feedback and sharing.

I made this cake for my daghters fifth birthday. I didn't have as much time to do it as I'd liked so I made just a quick cake. 

It's normal sponge cake bottoms with fresh raspberry mousse, chocolate ganache and lemon curd cream inbetween and then covered in a fifty-fifty blend of sugarpaste and marzipan. Flowers made of modellingpaste and leaves in SP. Letters in gumpaste and then painted golden. I was actually making the stringworks as the guests arrived, hence the sloppy result.

This is the cake that occupied my week!  I'm so glad this thing is finished.  It's not really my choice of style and I was so stressed out trying making sure I got all the plastic to the wedding!!

Buttercake with BC filling, marblelized fondant and fondant/gumpaste.  Strings are small threads of fondant press through a clay gun.

This wedding cake was for one of my good friends. Since I was also in the wedding, the whole thing was kinda tricky. There were lots of 3-layered drop strings and hand made roses that took lots of time. And of course a funny cake topper

I went all-out for my daughter's 6th birthday.  We had a big park party and I made this huge cake!  One layer was chocolate, the other French Vanilla, both with cookies and cream filling, BC and MMF, with royal icing flowers and drop strings.  Tasted great, and everyone really loved it.  I put a lot of time into this one, the first big bday party since learning how to do cakes.  This is soooo fun!

My first attempt at this, I think the folds of the dress could be better.  Fondant on a real barbie with gumpaste banner (got the idea here - thanks!) and royal icing on the bottom tier.

Actually a dummy cake for my final project for the Wilton Masters Course.  Gum paste flowers for topper and center piece; RI decorations.  A tiring two weeks, but lots of fun!!
