This was a birthday cake I made for my brother's g/f.  Her birthday is a few days before Christmas.  I wanted to fill in the leaves and petals, but ran out of time.

This was the cake I did for my Wilton 3 final cake.  The cake in the book had petunias cascading down the side, but it was getting close to Christmas so I wanted something more for the holidays!

10x10 square cake, red velvet with white buttercream.  The poinsettias are made from royal icing.  The center looks kind of bare, but I knew my writing would mess it up if I wrote anything in it.

Here's the cake that my son fell into and gave me so many problems this past weekend. It was pink and white marble, peppermint flavor and chocolate buttercream filling. I fixed it the best I could and you could barely tell where he fell into it. Of course, I knew where the mistake was.

Cake for husband's work--double layer yellow with chocolate mousse filling.  Bettercreme frosting, royal snowflakes and royal poinsettias.  Fun to make this one!

I made this for a party at the house.  Vanilla cake with buttercream and dark chocolate Satin Ice fondant.  Gumpaste poinsettias.  I cut the cake down to fit into a Southern Living iron basket.

I learned on this cake that you can definitely make too lush of a bed of icing to place flowers and leaves in.  No matter what I did, I still see too much icing (ivory) through the leaves.  The flowers are royal, the leaves are fondant, the ivory is bc and the ribbon is non-edible.

I'm sitting on my couch enjoying tv last night when my daughter decides to let me know that she had volunteered me to make 24 cupcakes for her class party. She did survive!!!! This is what I came up with at the last minute. I used piping gel for the mouth, eyes and hat. I really liked how the black took to it. The cupcake is Swiss Chocolate with chocolate buttercream icing. The poinsettias are royal icing.

I finally tried a cupcake cake! This was for a friend to take to a Christmas party. White chocolate cupcakes, vanilla IMBC. The red poinsettias are made from regular BC as are the decorations on the tree. Fondant star.

This is a chocolate cake with raspberry and Chocolate Italian buttercream. Oval pan basketweaved with 1/2 of the easter egg pan on top.   I made the following items out of gumpaste: not a creature was stirring sign, poinsettias, holly leaves, holly berries, teddy bear and ribbon.  I then dusted these items with edible luster dusts.  The following items are made out of Marzipan: mouse sleeping, mouse blanket and pillow, Christmas stocking.

Chocolate fudge cake with chocolate buttercream with dark chocolate Satin Ice fondant.  Christmas ribbon border with gumpaste poinsettias.  Made for one of my bosses' family celebrations.  He wanted it as chocolate as I could get it!

And they both had an english fruitcake inside. Covered with marzipan and fondant.

This was a carrot cake for a Christmas birthday.  I never made poinsettias before and I did these with royal icing.  I should have put "Happy Christmas Birthday" instead, but I was apparently in a really Christmasy mood!

French vanilla cake with Sylvia's IMBC. I crusted this with course sugar for an icey, wintery effect and the leaves are BC, the poinsettias are royal. I was very pleased with the result. Thanks for looking!

This is a dummy cake I made for the Mid-Atlantic Cake Show - Wedding Competition.  The cakes are covered with fondant/MMF mixture.  The topper is a sugar mold and the flowers are gumpaste.  The double hearts on the table were formed using a candy mold and fondant/MMF mixture.  The small square cake was real (needed edible for tasting) and also covererd in fondant/mmf mixture.  I found picture of poinsettia and used pin prick method to transfer design and then piped over design with royal icing.

I had made a batch of cookies, and had so many left over, I thought it would be cute to just stick them on the cake.  Looks kinda funny, but it was just for the office at work.  I'm still learning and experimenting alot.

Inspired by a Collette Peters creation. The flowers are outlined in royal icing, then filled in with piping gel.  Ms. Peters book provided a template for the poinsettia's, but I found it easier to do them freehand.  I hand carried this cake all the way to Tulsa OK to a relative's for Christmas.

This is my final cake for Wilton Course III - it's a white cake and I added butter and almond extracts.  It has a pistachio mousse filling.  I know it's not the greatest, and I could use some improvement, but I've had SO much fun in the classes, if you haven't taken them yet, go for will learn alot!  Looks like a christmas cake, but hey it's coming up.

My version of a Debbie Brown design. The castle is styrofoam purchased from CalJava. The snow queen, sleigh, Poinsettia and geese are gumpaste. The lamp posts are wedding cake separators with a blown sugar bubble sitting on top.

This is a strawberry cake covered with buttercream icing and chocolate Satin Ice, sprinkled with edible gold flakes and topped with gumpaste poinsettias.  It was wrapped with a non-edible gold and red rope.  Yumm!  Chocolate dipped strawberries!
