Finally!! I learned how to make stabilized whipped cream. This cake if filled with the same ingredients used in the decoration: whipped cream, strawberries and peaches. I placed 3 candles in the center. Too bad that people were in such a rush to eat it that I was not able to take a pic with the lighten candles.

This is what we know in PR as a "charlota".  Regular 2-layer yellow cake with Bavarian cream/cream cheese frosting, surrounded with ladyfingers and topped with fresh fruits.

This wedding cake is a combination of 3 different cake pictures the bride brought me.  A square shape with corners cut off (tiers 16", 12", 8"), piped string work and pearl dots, and grapes, pears and grape leaves for decor.  We made a separate smaller cake for her to freeze.

I made this cake for my cake loving father-in-law for fathers day.  It is a yellow cake with a fresh blackerry filling and topped with fresh blackberries.

My second charlota.  One of my coworkers had been asked to bring one to his kid's school and he didn't even know what it was but called me up anyway to order one.  He was very pleased with what he saw and tasted.

FUN to make cake! We tried to make the cakes look like trays of fruit to put in drinks, white chocolate dipped cherries, olives on skewers, limes and lemons. The glass was made of gumpaste with royal done inside, and a little pink elephant swizzle stick I cut off in the picture!

This is a cake I did for a women's ministry meeting.  It's yellow cake with almond essence. Whipped bittersweet chocolate ganache filled the first layer, and almond cream filled the second.  It's covered with buttercream and cherries. The small flowers are royal icing and the roses are buttercream

I haven't touched marzipan in over five years (to mold that is).  I think they look okay for being away from it for that long.

I recently posted 2 versions of this xmas fruit cake that I was making for family and friends. Feedback has told me that many people don't like the word Christmas shortened to Xmas for various reasons and beliefs.... so with help from a fellow cake mate we decided on "joy"

I usd Wilton's wonder mold cake pan for this.  Sliced off a small portion to give it a bottom.  Frosted in red and chocolate BC, then chocolate ganache poured over chocolate BC.  Yellow BC seeds and green fondant leaves and stems.

This is the final cake in the 2nd 8wk course my hubby has taken...  Fruit cake covered in fondant, hand painted sides and gumpaste poinsettia on top.

This was suppose to be one of those beautiful snowflake cakes that I keep see everyone post...but at the last minute (taking box of royal snowflakes to table to put on cake)....I DROPPED THE BOX!!!!  So this was a last minute idea.  The sugared fruit are plastic and was my centerpiece for the table.  Overall I like how this turned out....but still would have liked to do the snowflakes!!

Found this in a Wilton Yearbook.  Did this one about 3-4 years ago.  I believe it was a butter cake with buttercream AND spice cake with cream cheese filling.  Did Corneli Lace with a rose tip, wish you could see the detail.  it was yummy.

This cake is modeled after a lot of other groom's cakes that I've seen and loved (thanks to all of you who have made one like this - you were my inspiration).  The bride only specified that she wanted it to have the Harley logo on it and that it be chocolate.  She initially was thinking a sheet cake, but really didn't care how I designed it.  I'm happy with how this turned out.  The reception was held at our local Harley Dealership (in their banquet facilities).

The bride can't make up her mind what type of decor she wants on her cake,  She just wants "simple", so, I did this sample cake showing some different options.  The pic of the 3rd option (smocking) didn't turn out.  The cake is a fruit cake, so it was also a practice cake for me to learn how to seal the cake & apply marzipan & fondant.  Thanks to MissBaritone for your help.

Cranberry orange cupcakes.  The frosting is a mixture of whip cream, cream cheese and orange jam.  Cranberries on top.

This is the best ever pavlova recipe from this site. It's fantastic. The fresh fruit, whipped cream, and meringue. Everyone was raving over the taste. This is definitely a keeper :)

This was made from rich fruit cake, i used two 5" round cake tins, then just stacked them on top of each other once cooled. i made this for my mums bithday instead of buying her flowers.

This is a sample cake I made for the bride and groom to make sure I had understood what they wanted and to make sure I could do it ;)...Bottom is hazelnut with chocolate/hazelnut ganache covered in sugar paste, top is lemon chiffon with tangy lemon filling and lemon buttercream covered in sugar paste.  First wedding cake (sort of!! will post the official one in 3weeks!!!)

This cake was iced with buttercream then airbrushed purple. Sliced strawberries laid on top then finished off with purple roses with silver leaves and disco dust.

I've wanted to try the Bittersweet chocolate frosting from this site for a while, and decided that my own birthday was just right for this experiment (I'm a chocoholic! LOL). So this is a chocolate layer cake with a passion fruit mousse, covered in Bittersweet chocolate frosting. It was a dense cake (compared to a traditional Danish birthday cake), but my husband looooved it ;-). So the leftovers will definately not go to waste.

This is a cake i made for my family for this years christmas, a fruit cake was made a few months ago, and i covered it with sugarpaste.  A sugarpaste christmas tree with presents and holly around the outside.  I cant wait to taste it.

That was one of the 3 cakes we made for Christmas at the Cake Decorating course, term 4. It took us whole term to make the one with the 250 flowers and only one lesson to make this and the other one coming. They were 6" & 8" fruit cakes.
