My sister and I combined a lot of ideas from CC (she made the cupcakes) and came up with this for a Masters Commission team at our church. The idea is Christmas warms the heart and to remember all of the ideas of Christmas may fade with season but, Christ remains the same! TFL!

I made this for a Christmas party this past weekend.  
Coconut Cake with Coconut Icing and fondant accents.  Coconut and Sugar glitter for the snow around him.  It was made with the 3d cuddly bear pan with its ears cut off.

This cake was for a friend's wedding in another state.  I made all of the cakes, fillings, and icings ahead at home and drove the 5 hours to where the wedding was located.  It is a coconut flavored cake with lemon curd filling and coconut flavored buttercream.  The outside of the cake is covered in toasted coconut flakes, it was delicious!  The tiny people on the top of the cake were a decoration for Dia de los Muertos, the Mexican day of the dead.  They are a skeleton bride and groom.

I am very proud of these, although they are a bit much to eat at once. These are just "double-decker" cake balls sprinkled with coconut.  I think they turned out adorable, but piping chocolate over coconut was not my best idea! Should have thought that through a little more. I wanted to put fondant scarves on them but i didn't have any leftover as i thought i did and had no time to make any. Next time, though!

I volunteer baking cakes for Hospice.  They called for a coconut cake with clemson colors and a tiger paw.  I feel honored when they call me.  They loved it.  This was a 10 inch Sour Cream Coconut Cake.

This is for my Dad's birthday. My maternal grandmother used to make this for him every year when he was still married to my mom. My grandmother has alzheimers and couldn't remeber how she made it. So I talked to a few people in the family and this is what we came up with. Pineapple cake with pineapple coconut filling. 7 minute frosting sprinkled with coconut flakes.

This is an up close shot of the cake topper that adorned the previously posted coconut cak with lemon curd filling.  The bride is a good friend of mine and is sort of quirky, so I bought this little figurine on a whim and decided to give it to her as a wedding present, and she loved it so much she decided it HAD to go on the top of the wedding cake!

I made this cake for my mom's birthday last year.  She and I both love the coconut pecan filling and I was just going to use it to fill the cake, but then my wonderful sister came up with this great idea.  It was so much fun!  The cake is chocolate with chocolate icing and, of course, coconut pecan filling as decoration.  Needless to say, it tasted delicious!

White cake made with rum and pina colada mix. Pineapple coconut filling and icing made with coolwhip, pineapple, rum, pina colada mix and vanilla pudding......top it all off with a pineapple slice and a cherry. It's heaven in a glass!!

I made this for my husband.  They are sugar cookies dipped in Wilton's chocolate candy melts and prinkled with Valentine's hearts, shredded coconut.  Some of them were drizzled with melted chocolate.

Bunny cake with buttercream and coconut.  I would've preferred to do it all in buttercream because the coconut bunny cake reminds me of a grocery store cake but it turned out nice anyway!

I made this cake for my cousin's 13th birthday.  It is french vanilla cake with BC frosting, covered with colored coconut flakes and filled with strawbery whipping filling.

I had 16 hours warning (including sleep time and a 6 hour shift) that this cake was needed. Wanted something easter but....coconut!! Coconut grass on top and on iced board (and then forgot to ice said board), scatter jellybean eggs... and nice brown basketweave side (was so stressed it turned green on me) - and since the icing did not have to last I could use margarine instead of lard in the bc recipe. 
  And disaster struck. Y'know what? You can't straight substitute margarine for lard.  see forums.

Made this cake for a 30th Luau themed birthday party. Cake is vanilla, frosting is buttercream coconut top was molded from chocolate and carved for effect.

This coconut cake is a favorite of my uncle's who is 75 & just got
a new bike last year.  The cake is normally baked as a torted 3 layer 
8" round.  I changed it accomodate the bike.  The "road" is chocolate 
coated coconut.  The frosting is the one that goes w/the cake & is very
soft.  I hope it holds!  Thanks for looking

My first try at Lorraine's (Aine2) "cheeky monkey" cupcake toppers.  Thank you Lorraine!  You give great instructions, I usually suck at modeling but this wasn't too bad. ;-)  Pretty easy to do.  Did this for my nephew's 1st birthday.

This is one of my favorites to make. It is so easy and comes out beautifully every time. it's GREAT for beginners as it looks impressive but isn't hard!  I dust the bottom w/chopped pecans and while I make my own coconut/pecan filling, I use regular chocolate frosting from the supermarket.

I made this cake for the ladies at work to celebrate Administrative Professionals Day :D The cake is Pineapple Coconut.  I know it is so "amateurish" to not put foil on the cake board (it was the 1st time I put a cake on a non-wrapped cake board) I think I was jut so excited to start decorating that I didn't even stop to think about it ... ugh! But oh well, they ladies appreciated it anyway and loved the taste of it! :D I guess that is all that counts. TFL

Customer gave me recipe for what he thought duplicated Miami's Ice Box Cafe, which he'd enjoyed one trip to US. Decadent white cake including coconut milk and flavorings, frosting meringue b/c. Had to bring US style coconut over to Holland to fulfill order.

German Choc. Cake w/ Coconut and Pecan Icing.  Used BC for the strings, and the black icing...hard to do the strings over such a bumpy surface.  Feel sure had it all been BC like I had planned...they would have been straighter, but this fellow so badly wanted the Coconut/Pecan Icing.  I think it turned out okay, and he was so excited when he saw I had done the desired icing.
