I was in a baking mood so I decided to try a new recipe. I made some coconut milk sour cream cupcakes with coconut cream icing. Everyone said they were very good. I wanted a new flavor for my wedding shower and baby shower cakes.

These cakes were made out of the sports ball. Iced in buttercream. It was real simple to do.

This is an old fashioned pineapple & coconut cake yellow cake 3 layers with cooked pineapple, coconut and etc. between each layer then frosted with whipped icing and topped with coconut and cherries... Old Recipe of my Southern Grandmothers!

Go Diego Go cake for my daughter's 2nd birthday...Diego and Rescue Pack are fondant and the tree and rescue center are gumpaste.  (For the uninitiated, Diego's Rescue Pack is the Number Two candle holder).  All my daughtere  wants to eat now is "Diego Cake?".

This is the setup for a bridal shower held at my school. I made a 10 inch coconut cream sour cream cake with coconut buttercream. I also made a 9 inch white sour cream cake with chocolate chip hazelnut filling and buttercream frosting. I used some beautiful silk gerber daisies on each cake. I didn't smooth my icing due to the icing having bits of coconut so the icing has the spackle look.  Everyone loved the cakes, and they said they can't wait until I bake cakes again. Comments are always welcomed

This cake was done for a graduation party with a luau theme. The customer bought the carved coconut and the graduation hat at a craft store. The fence is pretzels, the flowers are silk, and the flip flops are fondant. This cake was really fun to do and everyone loved it at the party.

This cake is a replica of one that I saw on another website, done by CakesBy Ashley.  She is AWESOME!!  I did do some things different, but overall, it was her idea.  Done for a couples 1-year anniversary and they had a luau theme for the party.

Orange Juice, Vodka, 7up, Pineapple and Shredded Coconut flavor this yummy cake. Filled with an orange flavored whipped cream icing and fresh strawberries. Frosted with the orange whipped cream icing. Flowers are silk. TFL!

I made this for my sister several years ago.  Double layer with store bought (lol) icing and coconut!  Very delicious!

I made these about 8 years ago for my sister, for her birthday.  Her birthday always falls around Easter.  The bunny cake is actually a tradition in our family.  My mom used to always make one.  It's decorated with cococonut.  The egg cake is something I made up on a whim.  The "grass" around both cakes is dyed coconut, and of course, there are peeps and jellybeans.

Bunny cakes are a tradition in our family.  I used coconut to decorate as the "fur", jellybeans for the eyes and nose, Twizlers for the mouth and whiskers, and paper for the ears.  The "grass" around the bunny is dyed coconut.

I made this bunny cake for a church auction! It was fun & easy to make and brought over $100.00!! It's made with a vanilla cake that has a bit of coconut extract along with instant pudding, iced with cutter cream and covered with coconut. Used food coloring for details - wouldn't recommend the gels though - too much work! Jelly beans for eyes. This is only my 2nd cake to ever decorate, so I was pretty proud of how it turned out!

This was for a birthday at my husbands work. It was a request for a Red Velvet Cake  I made it in 4 layersw/CreameCheese frosting w/coconut dusting. Seeing it is a southern cake I decided to try my hand at making a magnolia. I was quite pleased w/the flowqer.

Top left- lemon cake with coconut filling and cream cheese icing, topped w/ shredded coconut.
Top right - Lemon cake with bettercreme icing...sprinkled yellow on it so I'd remember it was lemon and not yellow cake!
Bottom left - My take on the hostess cupcakes - bride said they tasted just like them
Bottom right - Yellow cake with pink buttercream icing..I loved making those look kinda like flowers!!

German chocolate cake with homemade chocolate and coconut filling and frosting. Top of cake frosted with vanilla/coconut buttercream. Trim and roses are chocolate frosting dusted with edible gold lustre dust. Photo is edible image. Didn't really have a plan for this cake. Just made it up as I went along. German Choc. Cake w/ Coconut and Pecan Icing.  Used BC for the strings, and the black icing...hard to do the strings over such a bumpy surface.  Feel sure had it all been BC like I had planned...they would have been straighter, but this fellow so badly wanted the Coconut/Pecan Icing.  I think it turned out okay, and he was so excited when he saw I had done the desired icing.
