Award Winning Pineapple Rum Cake

Posted by bakerybybill This pound cake is a favorite for people who love a moist yellow cake with sweetness of pineapple and coconuts. The rum is the key to the blue ribbons. Coconut Cake with Ginger Lime Curd

Posted by ThreePrinces I cannot take credit for this recipe, as I found it online some time ago. I will say, however, that it is my favorite cake and one of the most delicious cakes I have ever tasted. I always get rave reviews when I make it. It is moist, flavorful, and the combination of tangy and sweet is awesome. *The curd must be made in advance, it needs to thicken and set in the fridge overnight or at least 6 hours.* *You can find the canned sweetened cream of coconut in the alcoholic beverage section at your grocer. It is NOT alcoholic, but it is used... read more

Creamy Coconut Filling

Posted by Redmama I couldnt find a recipe for a coconut filling that I was happy with so I came up with one of my own. This is a very versatile recipe and can be adapted easily to suit different tastes/amounts needed, not to mention its SUPER easy! This recipe filled an 8 inch and a 6 inch cake. Enjoy! Ingredients 4 vanilla snack packs of pudding 1 Tbl coconut extract (add more for a more intense flavor) 3/4 cup shredded coconut (again add more or less to taste) Instructions Mix all ingredients together and use or refrigerate. read more

Coconut Cream Cupcakes

Posted by TamathaV I was looking for a better coconut cake recipe that was definitely coconutty but didn't taste like you were eating SPF32! I love the scratch WASC recipe by Edencakes so I used that as a base for experimenting and came up with this version that has a fine, soft crumb and a mellow coconut taste. I have tried several coconut milk coconut cakes but I found that using Cream of Coconut (I used Coco Lopez) gives a more intense yet still natural coconut flavor. I cut back the sugar in the original recipe by a cup because Cream of Coconut has a lot of sugar and... read more

Coconut Cake

Posted by Davina_Alloway I found this recipe in a Betty Crocker Recipe Magazine and tweaked it a little. I swear by Duncan Hines. I think it has the most flavor and it's really moist. AND I add pudding into every mix to make it even more moist. I hope you enjoy it as much as my family does. Ingredients 1 box of Duncan Hines White cake mix 1 box of White chocolate pudding 1 can (14 oz) Coconut Milk (NOT cream of coconut) 1/4 cup water 3 egg whites 1/2 cup of Large Coconut Flakes Instructions Preheat over to 350 degrees. Mix dry cake mix and... read more

Coconut Pound Cake

Posted by tokazodo I was searching for a coconut cake recipe today and I stumbled across one that used a boxed cake mix. I tweaked it a few times and this is what turned out. I am very satisfied with it and the taste and texture is awesome. I tripled the recipe. I able to get 2, 12" X 2" layers, 1, 6" X 3" layer and 8 cupcakes. I wanted the cupcakes to display around the tiered birthday cake, but I don't think they will make it! They are too delicious! Ingredients 3 boxes of White Cake Mix 1 - 14 ounce can of Cream of Coconut (not a type 'O'!) 1 1/2 cups... read more
