does anyone have a recipe to make a chocolate mint cake the is my hubby's fav ice cream ..his b-day is the 30th and he invited some friends over to have a beer party so figured I would make a cake anlong with dinner and he will be 25 any ideas I can do for a cake I was gonna do a football cake but since the Raiders are not doing so well he is kinda bummed don't want to bum him even more...

This is my favorite ice cream too. You could try adding Lorann flavored oil to your frosting or cake mix. I haven't tried it with this flavor yet but I have tried the Banana Cream and it was delicious.

Sorry, I don't have a recipe for the cake, but I do know that in the cake mix doctor book (either the regular or chocolate one) have a recipe for a mint chocolate cake. Sounds like a yummy cake.

Ihave done 2 different cakes.The first one, i just added about 3/4 of a cup of andes mint chiips to the cake batter. Also, I have put 1 tsp of mint extract in the cake batter,and it has worked really well too. I actuallyhave tomake 1 of these tonight!

I don'tput anything in the icing, just leave it as is, chocolate buttercream.

I've done a chocolate mint filling. You take one 8 ox package of cream cheese, 1/4 cup of cocoa powder, 1 can of sweetened condensed milk, 1 tub of whipped cream (the 8oz tub), and 1 cup of chopped Andes mints. IT tastes heavenly. Just mix all those ingredients up and let it sit in the fridge for about an hour to stiffen up a little, then fill your cake.

I found this I have never made a cake from scatch so I found this sounds easy for me especially since I only have 2 days to make it ..my next problem what design should I do I am comeing up with blanks it must me my seriously blonde day icon_lol.gif and ty to the those of you who replied.. thumbs_up.gif



Mint Chocolate Cake

1 (18.25-oz.) white or devil's food cake mix

1 tbl. mint extract

1 1/2 (15.5-oz.) containers Betty Crocker mint chocolate chip frosting

Andes Mints or any chocolate mint candies

1. Make cake batter according to package instructions, adding mint extract.

2. Pour into 3 (8-inch) cake pans that have been sprayed with nonstick cooking spray. Bake in a preheated 350-degree oven for 18-20 minutes. Cool in pans.

3. Frost generously between layers and on sides and top with mint chocolate chip frosting. Garnish with Andes Mints or any mint candies

I make a mint filling for my Creme de mint brownies, you could use that as a filling for your cake:

1 stick of butter, 8oz of powdered sugar, 1 Tb milk, 1 Tb. vanilla, 1/2 ts mint extract and a few drops of green food coloring

Hey peacockplace...I usually use this filling with two 8" rounds. So I'll just fill, then cover with a dark chocolate ganache. Then I whip the remaining ganache until it's creamy enough to pipe a scalloped border on top. Then I cut Andes mints in half diagonally and stand them up (diagonal side down) in between each scallop. Does that make sense?

i like to use real peppermint oil (purchasable at any health food store) in my chocolate truffles; but keep in mind that a little goes a long way. if you're making more a dessert cake, you could do a regular chocolate cake with a peppermint dark chocolate ganache frosting.

i find too much mint or any type of creamy or artificial mint in foods very soapy-tasting.

MrsMissey's filling recipe (above) sounds delish: if you used that in a chocolate cake and frost with plain chocolate or chocolate-mint ganache it would be like a huge peppermint pattie (yum!) icon_smile.gif

First, use good quality chocolate. You will use equal parts chocoalte and cream (some people vary on this). Simply heat your cream in a saucepan on low heat, then pour over your choclate. Stir until melted and combined. Some people add corn syrup for shinyness (I don't even think that's a word!), but I have never done this so I really don't know how much or the technique for doing that. But chocolate and cream is the basic recipe. Once you make some, you can alter it to suit your needs and taste.

Yes, klkhoneycutt, heavy whipping cream. Just pour over your cake. Start in the center and work your way to the outer edges. Don't use a spatula to spread it, the spatula will muck the surface and you won't have a nice pretty flawless shine.

Thanks sooooooooo much misdawn I am gonna do the filling and the ganache and use the quick cake mix recipe I found.. Every one has been helpful i printed everyones ideas and will try them through out the year when I make my hubby something special just because I love him icon_biggrin.gif
