do white chocolate chips melt down to almost a liquid form? i need to dip and coat so that it re-hardens to a candy shell.

Yes, but don't overheat! I melt in the microwave for 30 seconds, stir and repeat until smooth!

You can melt and dip but be very very careful. I think the best way for melting white chocolate is in a double boiler or in a bowl over a pan of water. Just make sure the bowl does not touch the hot water. Keep stirring it until smooth and then reduce the heat on the stove. Don't let the water boil or the white chocolate will sieze and then you have a mess.

White chips tend to thicken. If you don't have any paramount crystals, a dab of white shortening (crisco) will help thin it.

If you use a double boiler, my preferred method, be sure the water is only hot, not a fast simmer. The white chocolate is pretty fragile and will scorch.

Woah, those kick butt!! I was planning on making a big eyeball out of a sports ball pan, and these would be perfect all around it. Thanks! Do you think it would work as cake balls instead of cherries. I have never dipped in anything but dark chocolate.

Sure...I was thinking of using donut holes but I like the idea of cherries with the stems. They'll be icky inside too!
