Refrigerating Cakes With Fruit Topping?

Hi Everyone,

I usually use icing between my cake layers, but for my bridal consultation last night, I decided to try something new. I made the recipe for strawberry topping from this site, which was very good by the way, but I wasn't sure if the cake needed to be refrigerated. This is what they wanted for their wedding cake as well, but the icing is going to be MMF, which I've read that you're not supposed to refrigerate. Any suggestions on this would be helpful. Thanks.

From what I know ( I'm not an expert) you only have to refrigerate if the filling is perishable..... many fillings are non-perishable...

You probably don't need to refrigerate the filling, unless it contains milk or cream. However, MMF can be refrigerated. It just needs time to warm up and evaporate any condensation. You just need to be careful what decorations you add to prevent any colors bleeding onto the fondant.
