Hello all, I was reading the information on how to do Upside Down Icing Technique for Perfectly Smooth Icing. The question I have is:

1. Can I freeze the cake with mousse as a filling?

2. I have no more parchement paper, can I use wax paper?

Thanks all
Sylvie

I think it will be ok. You're not really freezing the cake, but letting the icing get firm. I've used waxed paper before. It will work, but not as well as the parchment.
