Petit Fours molds

Hi CC'ers,

I have some new molds for petit fours, but I found something on the net that talks about lining the molds w/melted chocolate and allowing it to harden, then brushing the chocolate with whatever filling and placing the cake back into the mold and pouring more chocolate on top. After its hardened again, unmold the petit fours.

I was wondering if anyone has tried this method and if so, what keeps the chocolate staying on the sides and not running down into the bottom of the mold?

I just bought some myself, are yours from Kathy Scott of Sweet Expressions? I have a friend who made some lovely Petit Fours using the molds and cutters. As I understand it you fill the mold with melted white or semi sweet chocolate, then turn the mold over on a rack and let the majority of the chocolate drain out so you are left with just a shell of chocolate on the sides AND the bottom. Chill, fill partially with a bit of piped filling,, lemon curd, buttercream, etc. cut sheet cake with the cutters, press gently into the filling, coat the bottom with more chocolate, chll till set and then unmold. She also carries some very pretty small design molds for making trims in chocolate to go on top of the Petit Fours. She says she adds Paramount Crystals or Crisco to the chocolate so they are soft enough to bite into without shattering.

These are the only petit fours that I will make now.

I have several in my photos. More steps but definitely less messy than regular petit fours. And a fantastic "WOW" factor.

Mine aren't Kathy Scott--at least I don't think so. I ordered the molds from www.countrykitchensa.com

Oh I love the way these look. I want to buy them so badly but I'm trying to be good and not buy anything unless I need it. I want to save any extra cash for the up coming cake show in San Diego and the Cake Cruise in Sept.

Kathy Scott has a heart shape petit four mold kit that sells for $22.00. I bought it at ICES...that's an inexpensive start. It comes with 3 silicone molds, 2 heart cutters and 5 plastic heart molds.

Joanne K, I'll be at the San Diego cake show too.

As for Kathy S. She's the nicest person, but I was really upset when I didn't get my order from Cake Camp from her. The people in her booth were really distracted and didn't really care to help the people with their orders. I think they lost it because Kathy can't find the order either, and although she did return my e-mail when I asked about where it was, I never heard from her again about my order. I was really kind of upset, especially since I have my receipt, but at least my credit card wasn't billed, at least I don't think so, I have to check.

These are really the best way to do petit f. very easy and gorgeous, but very sweet tasting!

Sweetflowers. That was my first time buying from Kathy Scott, although I have heard about her for years. I bought my kit from her eBAY store on a "Buy It Now" feature. It took awhile before I heard anything and then I got an email from her apologizing for not contacting me sooner. She said they had just buried her grandchild and things had been very difficult. I wrote back and told her how sorry I was to hear that, and that I was in no hurry for the kit. When she did send it she included three extra little silicone trim molds and thanked me for my patience. I thought that was such a sweet thing to do.

Kathy is a real hoot as an instructor. I was lucky enough to take two classes from her at CakeCamp. I really enjoyed every minute. She has great stories and is very helpful.

The petit fours tricks are amazing.

OMG, you're not going to believe this, I just got my order from Kathy!!!
She must have found the order from September and sent it. Now that's integrity and customer service. After Shirley had replied about her grandchild I totally understood what had happened. And I certainly didn't expect her to have to try and search for it. After all, I could easily have reordered from her site. That was really nice, like I said before, she's a really nice person.
