Help! Transporting Split, Filled 12X18 Cake A Long Way.

Hi! I'm making a 12x18 cake for a family baby shower this weekend. I will be filling it with fresh bannana's and strawberries but will be in the car for at least 2 hours getting to the shower. I will be using buttercream frosting. I really prefer to have the cake decorated before I get there. Besides putting in a cake box in the air conditioned car are there any other precautions I should take? My biggest concern is melting. Any suggestions would be really be appreciated! Thanks! Sally

You should be okay with the box and air conditioned car. Just use extra caution when driving becareful with sharp turns and stops. Make sure that you place the box on a flat surface and that there is nothing that can fall on top of it.

I transported a cake for a 50th anniversary party a couple of years ago. It was a three hour commute. I place the cakes on a thick layer of foam to reduce the friction .
I chilled them well before starting out and they arrived in great shape. Unfortunately, the hotel staff was so impressed by the cake, they placed in on a table under very bright spotlights where the roses promptly began to melt.

Hi Sally, for transporting cakes I always use a non-slip mat which I place under the cake box in the trunk of the car.  You can buy these at any home/hardware store for about $5 and you're cake won't budge.
