How To Store A Fondant Cake Overnight???

I am making my first mmf cake that is for my fathers b-day on Saturday and I plan to decorate on Friday. From what I have read, you cannot refridgerate fondant, but I was planning on using a chocolate pudding filling. So I guess my question really is, what type of fillings do you usually use in your cakes when you cannot refridgerate them??? I will be making a chocolate cake. Please give me some suggestions, time is running out! I am desperate!! icon_sad.gif

You can use a chocolate ganache. It can sit out about two days. Or you can melt chocolate and it to your BC to make a yummy filling. I usually use store bought pasrty filling that doesn't have to be refrigerated.

The cake I did yesterday was a banana fudge cake with bananas and chocolate ganache. I let it sit out one night, and it was fine. The fondant keeps the cake fresh...just make sure it is in a cooler environment.

Speaking of fondant is it a good idea to store fondant covered cakes in the cold cellar or cantina???

FYI, I have refrigerated fondant cakes with no problems. Of course, my experience is limited to 6-ish fondant cakes.

Definitely at least 2 days, perhaps 3 in the refrigerator. I would think you're oK with overnight. I don't cover it in the refrigerator or anything, just put it in on a top shelf so nothing can spill on it.

That's really good to know. Thanks cakesbyellen. I've heard so many different things about fondant that it's hard to decide what is best when it comes to storing it. Now at least I know I have more filling choices icon_biggrin.gif Does that apply to MMF also??

Yes, MMF and regular fondant. I only use MMF now, but I did use regular and didn't have a problem. I hope I'm not steering you wrong though. Like I said, my experience is a bit limited. Good luck though.

The main problem with fondant is humidity which is why a fridge isn't a good idea. Too much moisture can cause fondant to collapse. I normally recomend keeping fondant covered cakes in a cardboard box in a dry place. The temperature doesn't actually matter.

I have put mine in the Fridge......alll three doras cakes sat in there for about a day 1/2. they were fine... I think that it the humidity also ..maybe I just get lucky...but if If your in doubt...try to find a alternate frosting choice....

So far I've only been doing fillings that don't need to be kept in the fridge but I was just thinking more for the future when a bride wants a fondant covered cake with a cream cheese filling or something. You know what I mean??

like CakesByEllen I also store all my cakes in the fridge, allways overnight and sometimes for 2-3 days. Never had any troubles, just store it in a cardboard box and never ever cover with saran or things like that or in an airtight container
