Freezable Items?

Ok, I'm trying to see what items I can buy in bulk or on a good sale and then freeze until I need them. So can you freeze these items?

-sour cream
-whipping cream
-eggs
-cream cheese

What else do you freeze other than butter?

Also, does flour go bad? And has anyone had success with freezing cake batter? I've heard it's possible but how do you bring it back to temp without it getting waterlogged?

Sour cream and whipping cream do not freeze well.

Cream cheese will freeze, but when it thaws it can break down a bit and doesn't want to whip smooth. OK for cheese cake, not frosting

Eggs shouldn't be frozen either. You can freeze the whites, and sometimes you can preserve the yolks.

Flour will "go bad" if stored improperly or for extended periods of time. If you buy quantities of flour, keep it airtight. I store my whole wheat flour in the refrigerator, in a sealed container, and use it as soon as possible.

However, unless you have a licensed kitchen, buying in bulk is against health policy. In my opinion, If you freeze too many things, it also can reduce the quality of your product.

Thanks for the info. What I mean by bulk is 10lbs of butter at a time instead of 3 or 4. I'm glad I asked before I purchased the stuff.

You can put your flour in the freezer as well. '
