I got an interesting email the other day. A pastry chef student wanted to come work for me as my apprentice. She is willing to work from the ground up. I guess I never expected to get this type of email, but I suppose it makes sense. I had to explain that I work from home and don't have enough regular business to keep her busy.
Then I got a response that said thanks for considering her in the future..."think of all the Food Network Challenges we could win together!"
I just had to laugh... she sounds like a hoot.

Wow now that is really a compliment, shows how good you are, if students are trying to apprentice with you
I never thought of it that way...I just figured she was sending emails out to every bakery she could find on the internet, hoping for a few to interview at. I like your point of view, tho...
My DH said starting at the bottom meant cleaning my "client interview/bridal tasting area"...ie, kitchen, dining room, downstairs bathroom (hey, clients use it..).
I'll tell you AS a pastry chef student, I'd want to work with you!
I think it's hard to find people that specialize in amazing cakes (not walmart style KWIM?). I was thinking of finding one this summer too!
She might be happy to just help out once in a while when you need it (huge cake, extra work or details)! I would!
