I am just wondering how many servings you get out of a 12"x18". I might have a wedding cake to do and I want to give him the option of sheetcakes for the kitchen because they need the cake to serve 400. I thought I could give him the choice of a full cake on display for 400 or just display enough for 200 and then do sheetcakes to make up for the rest. I thought three 12"x18" stacked (so 6 cakes) so they have two layers would work but I just wondered about the serving sizes. Has anyone done this before? How many did you have them serve? Also, how much should I charge for the sheetcakes? They would just be buttercream filled and iced, scored for cutting, with a rosebud on each piece.

If you are doing double layer cakes (4in high) then you should get 100 wedding servings from a cake that size. As far as charging i charge about $1 a serving for those. If they just want it plain iced with no piped flowers on it i would charge more like $80 per cake for that.
