Can you freeze unused Royal Icing? I was planning on making some to demonstrate in class, but won't be able to use it for a week or so. Do you think it'd be okay in the extra freezer? I had some that broke down in the fridge in two weeks so I don't want to try it again.

I make mine with meringue powder and it can stay out at room temp for 3-4 weeks, covered well.
If the royal breaks down, just re-beat it. I haven't had any problems bringing it back. I keep the unused royal in the fridge 2-3 weeks.
Royal icing should not be frozen. It makes it useless for decorating with. If it's made with real egg white it only keeps a few days. If it's made with meringue powder simpy exclude all air. Use saran wrap and place it right on the surface of the icing. It will keep 2 or 3 weeks in the fridge. If it appears to have broken down beat well adjusting the consistency with either water or icing sugar as necessary
My wilton instructor said to always store it at room temp. & it should last for a couple of weeks
