Mmf Mishaps...help

I am making fondant roses using cutters. I need to roll this out 1/16 of an inch in thickness and when I roll it that thin it kinda melts or breaks. It melts in my hands or breaks if I make it thicker.

Can you help?

It's possible that the MMF is still too warm when you're working with it if it is melting. It works best if it has set at room temperature for a little while. If breaking is a problem, then either it has set out too long, or has too much powdered sugar added in. Depending on humidity, etc. the recipe has to be varied. It's also possible that the sugar may need to be sifted more before adding it to the melted marshmallow. Sometimes it is helpful to roll it to maybe 1/8 thick then work with it in your hands until it is thinner. Adding a small amount of gumtex can also drastically improve the texture of the MMF. If it is too sticky, then dusting with cornstarch helps! Good luck, I hope this helps!!
