I have the chance to make traditional english wedding cakes for a local sugar free store. The cakes aren't a problem and I can also buy sugar free fondant locally but I need a recipe for sugar free marzipan. Can anyone help? The shop is happy to accept recipes made with splenda or other sugar substitutes.

Maltitol is supposed to be a pretty good sugar substitute that can be used for diabetics. I don't know if it is a direct substitute, though. It would be pretty costly, especially since I couldn't find it anywhere in the UK, so shipping would probably be pretty high, but it you can't find anything else at least it's an option. Maybe you can find somebody that can provide it locally.

Just got a response from the manufacturer of maltitol. They say that most times it's a 1:1 substitution for sugar. Little or no adjustment is needed.
