Can someone enlighten me on how to get your buttercream to look as smooth as fondant? I have seen several photos of cakes where it looks to be as smooth as fondant but it says it is buttercream? I just cannot get my buttercream to look that smooth! Is there a certain recipe I should be using to get this desired look? Am I being fooled into thinking that it is buttercream but it really is fondant?
HELP!
Hello,
I am still practicing on getting my SMBC smooth but here is my recomendations.
All of this helped me a lot.
1. http://www.amazon.com/dp/B00143YIW8/?tag=cakecentral-20
2. Other youtube tutorials from different decorators with using different methods.
3. A lot of practice.
4. When you decorate a cake try to keep decorations to minimum, no borders. All exposed "mistakes" that you will see, will help you to try to do better next time.
5. Our eyes can see better then picture can show.
AI use SMBC and I find that if I whip it a little longer it gets very smooth and satiny, when on the cake it can get smooth as glass! I use a bench scraper. I have also done the paper towel method on ABC icing and it worked very well!
I have been doing this for about a year now, just for fun/hobby. I can get wonderfully smooth results with smbc. I cannot get nice results with American buttercream. Tried all variables including all butter, all shortening, meringue powder, coffee creamer, and modified smbc/abc. I have had the most success with Indy Deby's buttercream recipe. Tastes great but can sometimes be gritty and too soft. Just keep experimenting and practicing. I have been giving neighbors and friends lots of cakes. Try smbc.
AI use a crusting American Buttercream which is half butter, half Sweetex. I use a Viva paper towel and fondant smoother (sometimes my hand if I need the warmth for a particularly stubborn spot) and i can acheive an almost perfect finish. The are tons of YouTube videos on this method.
Check this ladies tutorial and she has one for square cakes too, helped me a lot.

If you want a SUPER smooth surface on crusting buttercream, use the paper towel, then go over it again with a piece of printer paper. it will get rid of any texture from the paper towel.
