Where To Start?!

AHello everyone, just curious if anyone has any advice on what I should do here. I've been decorating cakes on and off out of my kitchen since 2007 and am self taught. I think I took one course at Ben Franklin but that was it. I have talent, and had a call back to he on the next great baker but declined asni had just had a baby. Aside from that...since then I've been having a hard time trying to figure out where to go in life. I've been anything from a horse trainer to car salesman. But cakes are my calling. I recently got hired at a local small town bakery, and have been the talk of the town and surrounding areas. I realize that this is what I should do with my life and now I am.in a dilemma. I love my job at the bakery, just got a raise, and my employer is going to pay for me to take a class at Le Cordon Bleu(day class) but I eventually want to start my own bakery/bistro. The thing is...i want to go to school at Le Cordon Bleu for baking and pastry but I have a 7 year old and a full time job. Its 11-3 pm and the school is a hour away. I don't want to be stuck in a small bakery the rest of my life and I feel I have the potential to be really great. How would one balance this? Should I go to school or not? The only two baking/pastry schools near me is Le Cordon Bleu or Art Institutes. Any suggestions would be extremely helpful.

this is the dilemma we all face, balancing life and work. 

sometimes it takes temporary sacrifice that pays off in the end. 

 

only you can decide how to prioritize your responsibilities. 

if your employer is willing to pay you to go to pastry school and that supports your end goals,

then i suggest you find a way to work it out. 

 

it's a huge step from cake decoration to owning your own business. 

write down your plan and figure out what steps you need to take. 

some people go through the process and find they really only want to

bake and not run a business. 

 

 

none of us can tell you how to live your life.

So true. Some people are great cake artist but just don't have the skills for running a successful business. Those people should either team with a good business partner or work for someone at a bakery.

Some people can successfully do both.

You need to determine which you are. You also need to honestly evaluate what is most important in your life right this minute and what can wait.
