The health department requires me to wear gloves, and I am very frustrated when trying to cover the cake with fondant.  They suggested to run my hands under warm water and put my gloves on.  Its not working, the heat isn't getting through the gloves to the fondant, just makes my hands sweaty. I have tried vinyl and poly.

 

When I applied for my permit, I asked about the bare hands exemption and they said that was only for already prepared foods.  Soooo frustrated....

Hi!

 

I am not sure where you are located but sometimes I do  know that each council's requirements can vary within the region based on the Health Officers interpretation of the law.   Do you have a local sugar guild/sugar craft group in your area?   They would be able to help you clarify the council requirements and also be able to provide you with advice.   If this is a requirement with all cake decorators in your area, then they might also be able to provide some suggestions as to how to best work with the fondant.

AI'm in the U.S. (ky) and we do have a bare hands exemption. It requires a sign posted in your kitchen and then either double hand washing or hand washing plus hand sanitizer. I can't do pastry in gloves.
