I have done tons of research on this topic and on both separately and I am wondering if anyone con confirm a few things for me!

So it would be "legal" to have a cottage license for all of the baking and then be able to also use a commercial kitchen for the same business and essentially the same cakes to make all of the perishables and to assemble and decorate the cake? It seems like this would pretty much cover all bases if my understanding is correct.

Also, buttercream is listed as an approved food so long as it does not use a cream or cream cheese product. Does that mean that even with butter this is allowed?

i don't know -- you are combining cottage laws with commercial? i don't understand -- it's like combining jr high with university enrollment isn't it? if you have commercial space then go with that no?

no no you don't use both like that -- one or the other

Are you looking ahead to your next move? Where will that be? If in the US, states have their own cottage food laws so it depends upon where you live. Your question needs to be answered by the health inspector - in NY, it is not possible to be a Home Processor and also use a commercial kitchen (which entails having a commercial license).
