I made a some cupcakes for my nephew and is girlfriends baby shower (my 1st event).  They changed their order 4 times and the night before the event, they changed once again. this made me neverous and unsure of myself.  I made 50 red velet cupcakes and they all came out horrible.  I have made the red velet cupcake many times and everyone who taste it says that it is great.  I later found out that you cannot let the batter sit while you make multiple batches at a time because it causes the batter to lose the air bubbles.  Also, my cooking space is small; therefore, making the area that I was working in warm and my cupcakes were not moist and light as usual.  I almost gave up on baking and then I discoved Cake Central.com and I realize that there is a science to baking and I am determined to master this.

good luck, hunni....but don't let customers....even family customers push you around! It's completely unacceptable for an order to be changed the day before delivery! Don't let that happen again!

Friends and family can be the worst, too...Start saying that after you've made up your shopping list there are no changes!

 

Depending on the batter you can leave the batter out (or in the fridge), it actually can help some recipes. It depends on the recipe and the leaveners in it, though.

AI leave my batter on the counter while all my cupcake batches bake. This has never affected the cupcakes. Keep trying.

And don't let people change their order. I have a no changes can be made once an event is 30 days away clause in my contract. I hold people to this. Even family members that don't sign the contract.
