I have some ganache that won't thicken. I used ghirardelli chocolate for this. Does anyone know what would make it not thicken?
AMight be too much cream. Try adding more choc. I use a ratio of 2:1 choc to cream. So eg for 100g of choc I use 50ml of cream.
