Hi everyone!  No cake for me this week other than the one I'm experimenting with here at home. Followed Pioneer Woman's Pumpkin cake recipe for the first time (only did a half recipe for our small family) and decided to experiment with the "condensed milk caramel" too. Basically you boil the condensed milk in the can (without the label and totally submerged) for 2 hours and then let it cool. Because I'm making a "poke" cake I only let it cool for about an hour so it would still be "melty" and used half the can for our cake. I'm letting the rest completely cool. It's supposed to thicken up a lot as it cools. Once the cake is cold I'll frost it with vanilla buttercream and then serve it right from the pan. The cake batter tasted great, smelled great cooking and the "caramel" was wonderful too so I'm hoping this is a great new dessert in the making!

 

I'm thrilled because my son is on vacation now which means so am I! I have 1 pumpkin pie and one chocolate silk pie to make for dinner at relatives on Thursday. We are having our own "Thanksgiving" tomorrow...roasting a small bird and all that...thus the cake. But I get to sleep in every morning from Sunday to Sunday and for that I am VERY thankful! LOL!

ACat your pumpkin cake sounds delicious.

No cakes this week, but last week I had 3. The wedding and grooms cake for my son's wedding. I also had a birthday cake for my niece which after all said and done should of end it up on cake wrecks.

My hats off to all of you that do this as a business. I could never imagine doing cakes as even a part time business. To much stress.

Marian, 

 

Love your cakes but my favorite is the wedding cake! That's gorgeous! And, yes, running this as a biz is exhausting. I'm really happy that this is my last year.

AOhhhh Cat! I would love to try making that caramel sauce/dulce leche using boiled condensed milk technique! I even read that you can use a crock pot! It's on my to-do list :)

Marian, very pretty wedding cake! And no, the birthday cake does not belong on cake wrecks! It's cute!

Here's my cake for the week! Made it for my baby girl's 10th month birthday :) i chose Garfield in honour of my dad who loved Garfield and friends. (I miss him, sniff)

Hi All~  

I'm in a later time zone, so when FNCC begins, I have had dinner and have been sitting on the couch, watching tv, getting sleepy, waiting for everyone to get online. Then, I wake up, and it's Saturday morning! LOL So, I made it this time, just had a nap ~

I am working on color...Sometimes my colors are too bright or just not quite right. Guess it comes with practice...

mattyeatscakes-Those are perfect...I mean, really...How? I'm sorry about your Dad. I know how you feel. I miss my son. He loved Garfield, too. Thanks for sharing those-brought a nice memory of Gabriel~

Marian- The wedding cake is simply elegant! Love the groom's cake, too. You're better than I am with buttercream. I don't even do it, if I can fondant my way through!

Cat-You are so wonderful to host the FNCC, and offer help, advice, suggestions, and commentary to keep us all motivated! THANK YOU! Did you just decide to do this one Friday Nite? How long has it been going?

Ok, here are two grad cakes I did back in May, one for a boy, one for a girl. I tried to stack the girl's cake so that it looked like art of it was floating, but I think it looks more like hanging, lol.Once I got it up there, I then realized I couldn't put a border on it. Luckily, it was a gift cake, so no one would dare say anything bad. Ah, inexperience...

Cat, I'm addicted to dolce de leche! Read about it here on cc, tried it yet and fell in love instantly, lol! It's too delicious. I made it in the oven (only took an hour).

Marian, you are definitely very talented! Even if you don't do it for a living...but you could! My favorite is also the wedding cake

Ooooo, I love coming back on Saturday morning! The new dessert is deeeee-vine! It is very sweet with the buttercream so you need to cut those slices small! LOL! I might try it next time with whipped cream and see how that is too. I will try the oven method but I understand there are all sorts of ways to do this so I will, I'm sure, try them all to see which works best for me but the dessert is yummy enough to do it again and regular store bought caramel sauce wouldn't taste the same.

 

As for FNCC...no...it was here long before I was. I simply took over when the person before me took her career in a new direction. I love it too much to let it go! Because I'm in the earlier time zone than most of you it works out perfectly that I start it out before I go to bed and before you wake up...that way everyone has all "night" to post. What I love is that it can go on for days! Be aware tho'...as the holidays hit, the traffic here is slower. People get caught up in their family celebrations and don't participate as much. As for me...I'll be here. The only Friday I'll miss is the day after Christmas and that's because I will be traveling. But I will be here that following Friday so we can catch up then. Otherwise I'll still be here starting it up and trying to keep it going!

 

I love the new cakes this morning! 

 

@mattyeatscakes that is the cutest Garfield cake! Just so adorable! Good clean work too!

 

@Gold Star Mom I love the little grad caps! Both cakes are lovely but I do know what you mean about trying something new and learning from it. I swear I learn something from every cake!

 

@julia1812 Love the Dora cupcakes but I bet the other one was DeLish! That is one of those cakes you see and just can't wait to slice into!

AHi cat, just a remark on the dolce de leche... I'm by far no expert on it and only recently started making it. I also read about the method you used. The reason I didn't boil the tin in a pot is that someone said the is a (small) risk of the most tin "exploding"

AThanks everyone for the kind words! I lost my dad nine years ago, and i miss him everyday :( he was a baker, and managed a bakery for a while. So i guess baking runs in my veins! But he didn't see me get into baking as i only got into this about 3 yrs ago, huhuhu.. But i hope i'm making him proud :) and yes julia, i make my kids a monthly cake till they are one! Hehehe they are my practice cakes! It's fun! :)

I have never tasted dulce de leche. But i'm sure i'll like it as i love caramel and condense milk!!! Yum :)

You know, I did the caramel trick years ago. A friend worked at O'Charley's and that's how they did it...Sweetened Condensed Milk in the can, unopened, boil for 3 hours, then open and BOOM- perfect consistency for caramel pie. Just keep adding water as it boils off. I'm interested in what consistencies you guys got? I wonder about the electric bill, oven or boiling?  The caramel I got was beautiful color, and was a spreadable caramel that held up, not pourable. It also was not a "chewy" caramel, but more like a thick pudding. Julia1812-How did you make yours? What was the consistency of your caramel?

 

As for Christmas,  I will be here. Thank God for cakes and cake friends! Since my son died in the war, I have not celebrated the holidays. People invite me but it's too hard watching them with their children because it makes me more sad. That is why cakes are comforting, and friends here are always there for me. This year I discovered a little town nearby has a Thanksgiving Dinner for those who have no one, like me.  I will be attending and donating cakes and treats, so it gives me work to do, and people to talk to. I'm thankful for that~ 

 

Cat, the grad caps were added as an emergency lsat minute to cover where my alcoholic Mom poked 10-12 shrimp forks into the cake I had just got done working on for hours, and just after the grad arrived to pick it up. Yes, she did this while the customer was there and while we were talking and my back was turned for 5 seconds. My customer and I were horrified. Her excuse was that she was going to COVER the cake with TIN FOIL for me (which I never do), and didn't want the cake to get messed up, so the forks were to keep the foil from "ruining" the cake!! . This was the before:

She hates my cake business, thinks it is stupid, but I don't care. I will continue to make them.  I just removed the forks and rearranged the caps to cover the bad spots, and added some tassels, so in the end, no one could tell, and it looked even cuter, right?! LESSON: Don't let anyone sabotage your soul, not even your family or your own mother. I learned a long time ago about making lemonade out of lemon sour head people! We all have people who are jealous of our creativity or something. As we go through our week, remember there are supportive friends here, and we appreciate how hard each of us are working on this wonderful artistry! Keep Caking!

A@Gold Star Mom: I made my dolce de leche in a small casserole (poured the sweetened condensed milk in), sitting in a bigger casserole dish which was filled half with water. Then I covered the entire thing in aluminum foil. In the oven for 1 1/4 hr. Done. The consistency reminds me of nutella. It's spreadable but not runny at all.

Great job on covering up your (mom's) cake disaster. Your story is very sad... I can't even imagine how you must feel. Loosing a child must be the worst thing that can happen and I'm sure the pain will never end no matter what. I'm glad you take some sort of comfort in making cakes. Anything destructive might help I guess... And you are good at making them! Hope to see some pictures from that thanksgiving dinner here

I like the idea of being able to check the dolce in the oven. The chance of the can exploding in the stove top method is only if you let the water drop to below the can. It has to stay submerged the entire time so you have to watch over it. Semi cool it was more liquid like (sorta like chocolate syrup) and perfect for spreading onto the warm cake since I wanted it to soak into the cake and not sit on top. I only used half of the can for the cake so the rest went into a mason jar and in the fridge and now it's thicker...sort of like the caramel sauce you'd use for ice cream? Still pourable but thicker like ganache. Hope that makes sense! It sure is yummy!

 

@Gold Star Mom  So sorry to hear about the grad cake but it does look awesome with the caps on it. Glad you had the stuff on hand to fix the damage. Don't ever let her get away with telling you that your skill is silly or wasted...it's a beautiful skill to have!

 

I'm always thankful for my online friends. For those who say the internet is isolating they have not idea how liberating it can be as well. I talk to people all over the world...many I know in real life but who live too far away for me to see them often...and to hear about other lives, other cultures, holidays, traditions...it's just such a wonderful thing!

I know it's already Monday... and I'm about 3 days too late for the FNCC but here are the things I got done this weekend... (seems like all my cakes are for Sunday lately!)

 

Big cake for family party:

 

Mini Cake for the birthday boy to celebrate at Preschool on his real birthday.

 

Ombre SMBC with Isomalt butterflies

 

 

My friend that ordered the butterfly cake just wanted a simple buttercream cake with butterflies for her mom and let me do whatever I wanted. I've always wanted to do a smooth SMBC with ombre effect as well as make something out of Isomalt so I took it as an opportunity to turn it into a project cake =).

 

I also had an order for 100 cake balls and I forgot how much I hated dipping them! I'd rather do cake pops!

 

For the Dulce de leche/boiled condensed milk... I cheat and buy the preboiled can in the hispanic foods section. I've bought it at Walmart for about a dollar more than condensed milk. It's made by Nestle and it looks just like a can of condensed milk, just labeled dulce de leche. - beats boiling/baking/etc.

AThanks! I made the butterflies out of Isomalt and a butterfly wing mold (my first time using Isomalt but it was super easy!). I dusted the wings on the underside with petal dust (where the veining texture was).
