I am in the process of converting a space at home into a kitchen for my cake decorating business. I want to buy a commercial oven, but I am unsure of which brand I should go for. There are so many out there and of course each supplier will tell you theirs is the best. I would love to hear your experiences, good and bad, to help me make my decision.

blodgett sucks -- full convection sucks -- ge profile sucks but it's a home oven -- i like a nice deck oven although others have had problems with those -- right now even though i've had it for years i am still in the honeymoon phase with my deluxe convect a ray cake oven -- i love it to pieces -- i also have a castle pizza oven with stone decks but i never got it installed, my husband thought it would burn the house down -- if nothing else it was a great incentive to get the deluxe :-D

Thank you for your input, it is very helpful! Are all the Deluxe convection ovens Convect A Ray and particularly suitable for cake baking, or just some models? I was on the website but I am still not quite clear on that. Have you had to service your oven yet? I am just wondering how easy it is to get parts etc. I live in the Caribbean so will probably have to import whatever oven I buy myself, so it is probably best to get an oven that I can get parts for easily.

 

Finally, did you choose the Deluxe after reading about here on CC? It seems like it is the commercial oven of choice on Cake Central, while on other food boards Deluxe ovens seem to be relatively unknown.

i got a deluxe because i saw it at a cake convention in vegas and earlene has one -- hers has four decks mine has three -- i think i've never had to service it except to get it installed by an electrician -- i think deluxe makes other ovens-- can't remember --

AI agree with K8memphis, about DeLuxe. DeLuxe makes these ovens especially for cake. They also make ovens for other applications. I went to the factory to see how they were made.

I have two of them. We use the four shelf for cupcakes and I use the three shelf for my Wedding cakes. I have had the three shelf for sixteen years and the four shelf for six years with no problems.

I can bake three wedding cakes at a time and the cakes come out perfect. I load it up, set the timer and go make icing, etc. When the timer goes off I pull out the smaller cakes, reset the timer and wait for the bigger ones to get done. Yes, I also love mine.
