Egg Replacer

I have a bride who does not want eggs in her cake and says she uses egg replacer.  Has anyone used this?  Can I substitute it 1 for 1 to the eggs?  How does it compare?

no i've never used egg replacer --but i've worked with eggless cakes before that were atrocious -- and recently i baked a wonderful eggless chocolate cake with 'just mayo' -- don't know if your bride is into chocolate but --

then the 'just mayo' product is available at whole foods and you can check the website for other locations if you decide it's something you want to experiment with --

AWe have a product in Australia called egg replacer by Orgran. There are directions on the box to make up a substitute - for each egg you add a certain amount of powder mixed with water.

I have used it a few times, I think the cakes bake up a little denser. If the bride is used to it, I'm sure she'll be fine with the texture, but if you have time I would try some naturally eggless cake recipes as they should give better results. Try K8's suggestion if you are going with chocolate cake as a start.

Alternatively, could you bake a specific tier for the bride if there only a certain number who need an eggless cake? That would be simpler, and then people who are used to regular cake would get your normal recipe.
